This truffle aioli is quick, easy, but tastes like it came from an expensive restaurant! It’s so delicious with french fries (obviously!), but it can be used in a variety of different ways. Ahem, I may or may not have eaten this directly off a spoon. 😉

What is truffle aioli?

Truffle aioli is a garlicky, mayo based sauce that has been infused with the flavors of truffle using black truffle oil.

Pro tip
A true aioli is an emulsion of garlic, olive oil, salt, and sometimes egg, but we’re making a “cheaters” aioli and using mayo as our base.

Where can you buy truffle oil?

Truffle oil can be found at any local grocery store in the oil section. You can also buy online from stores like Amazon. I bought this Black Truffle Oil from the company Truff (we’re obsessed with their hot sauce, so thought we’d give their oil a try).

Whatever truffle oil you buy, be sure to use a black truffle oil that’s made with REAL black truffles. Many truffle oils are unfortunately made with synthetic ingredients. Real black truffle oil will be more expensive, but it’s worth it!

What does truffle oil taste like?

Truffle oil is earthy, rich, and mushroomy. It’s often quite pungent (depending on the brand), so a little goes a long way!

Pro tip
Truffles are a fungi considered a delicacy because they have unique growing conditions which makes them very rare.

Ingredients

This aioli tastes like it comes from an expensive restaurant, but requires less than 10 pantry staple ingredients!

  • Mayonnaise – a true aioli is an emulsion of garlic, olive oil, salt, and sometimes egg, but we’re making a “cheaters” aioli and using mayo as our base. I always have an olive oil based mayo on hand, but any mayo should work. It’s a prominent flavor in this aioli, so be sure you enjoy the taste of whatever mayo you’re using.
  • Sour Cream – balances out the creaminess of the mayo with a touch of tangy flavor. The flavor of mayo is too strong if used by itself. Want to lighten it up? Try greek yogurt as a sour cream replacement.
  • Truffle Oil – the star of the show! Black truffle oil is olive oil that has been infused with black truffles. Read your labels: not all truffle oils are created equally. Be sure the oil you’re purchasing is made using real truffles, not synthetic ingredients. Remember: a little goes a long way, so add slowly — you can always add more, but you can’t take it out!
  • Garlic – provides a strong, nutty flavor. Buy jarred minced garlic to save on prep time.
  • Lemon Juice – adds a sharp, tangy flavor to balance out the creaminess of the mayo and earthiness of the truffle oil.
  • Salt, Pepper, and Onion Powder – a simple blend of spices to add that little extra “something something” other recipes lack. The seasonings are kept so simple, because we want the flavor of the garlic and truffle oil to really shine.

What to serve with truffle aioli

Aioli is a great dipping sauce or spread for a variety of different foods.

  • As a dip. Serve next to french fries, sweet potato fries, tater tots, or potato wedges.
  • On burgers/sandwiches. Spread it on smash burgers, portobello mushroom burgers, chicken sandwiches, club sandwiches, or even grilled cheese.
  • Over veggies. Serve it on roasted vegetables, roasted potatoes, or steamed broccoli.
  • As a sauce. Drizzle it on chicken tenders or pork chops.
  • With seafood. Dollop it on crab cakes or tilapia.
