Hallelujah spring is FINALLY here!!!! This past weekend was actually HOT. Although Trevor and I worked a lot, we did make sure we spent plenty of time outside. Saturday morning was spent at the farmers market, where I only wore a light jacket and wasn’t even cold a little bit 😉 That afternoon we took Teddy for a walk, and then spent the evening eating dinner outside.
It was spring perfection.
Sunday morning was also warm, so I was super happy that Saturday afternoon I made not one, not two, but THREE different versions of Overnight Oats.
Although I love overnight oats all year round, I especially love them for warm spring mornings, when the last thing I want is something hot.
Since it seems like spring is finally here to stay (everyone, lets cross our fingers), I thought today would be the perfect day to share three of my favorite overnight oats recipes: peanut butter honey, blueberry (no banana for banana haterz), and a vegan strawberry banana.
I had a lot of fun with today’s overnight oats recipe and I honestly can’t decide which one is my favorite.
I love the peanut butter honey version, because it’s healthy enough for breakfast, but decadent enough for dessert. I actually based it off of my peanut butter honey banana bread. 🙂
I love the blueberry version, because it’s a no banana version! I’ve been doing a lot of overnight oats research and I seems like every recipe I find includes bananas. While that’s not a problem for me, sometimes, you just don’t like or want bananas in your oats! If you’re a banana hater, you’d also love my no banana berry green smoothie.
Lastly, I love the vegan strawberry banana version. This one was Trevor’s favorite, which really surprised me, because #1 He LOVES peanut butter and #2 He LOVES blueberry things. Which side note: I just found out this weekend that Trevor would rather have a blueberry muffin over a chocolate chip muffin.

Anyway, I love the vegan strawberry banana version, and it’s also a great option for you readers who are vegan!
The best part, though, is that they’re all super simple to make.
Let’s start with the peanut butter honey overnight oats:
Oh holy yumminess, I ♡ these.
Stir together oats, skim milk, non fat plain greek yogurt, peanut butter, honey, a pinch of salt, cinnamon, and banana and you’ve got yourself a decadent, but still totally healthy option for breakfast. Cover and store in the fridge overnight. In the morning top with honey roasted peanuts and dried banana chips for some crunch, maybe an extra dash of cinnamon, and I wouldn’t judge you if you drizzle some extra peanut butter either. 😉
Next up, the blueberry overnight oats:
This one is probably MY favorite.
This version is a little different from the other two, because they’re not quite as thick. These blueberry overnight oats are perfect who like their oatmeal a little soupier.
This version is also a little different, because there’s NO banana and we’re combining skim milk, blueberry greek yogurt, salt, and blueberries into our Vitamix. Blend until smooth and then stir together with old fashioned oats. I did this, because I wanted the oats to take on that gorgeous purple blueberry color.
Again, you’ll throw these in the fridge overnight and in the morning, you’ll top them with more fresh blueberries, crunchy granola, and unsweetened flaked coconut (We ♡ the Bob’s Red Mill variety).
So good.
Last, but certainly not least, the vegan strawberry banana overnight oats:
This version was intended for our vegan friends, but honestly, whether you’re vegan or not, you’re gonna love ’em. These vegan strawberry banana overnight oats IMO are the most fresh and summery tasting.
All you’re gonna do is mix together oats, unsweetened almond milk, salt, banana, diced strawberries, and a touch of agave together. Throw ’em in the fridge and the next morning, top them with more fresh strawberries, bananas, and sliced almonds.
Whatever version you chose: peanut butter honey, blueberry, or vegan strawberry, there’s definitely an overnight oats recipe for you! They’re all incredibly easy to make, creamy, healthy, and delicious!

Ingredients
Peanut Butter Honey Overnight Oats
- ⅔ cups skim milk
- ½ cup non fat plain greek yogurt
- 2 tablespoons peanut butter
- 1 tablespoon honey more or less to taste
- 1 pinch salt
- ½ teaspoon ground cinnamon
- ¼ cup mashed banana about 1 small banana
- ½ cup old fashioned oats
Optional Toppings
- Dried banana honey, peanut butter, honey roasted peanuts
Blueberry Overnight Oats (No Banana)
- ⅔ cup skim milk
- 1 (5.3 oz) container blueberry greek yogurt about 1/2 cup
- 1 pinch salt
- ¼ cup Blueberries
- ½ cup old fashioned oats
Optional Toppings
- Blueberries granola, unsweetened flaked coconut
Vegan Strawberry Overnight Oats
- ⅔ cup unsweetened almond milk
- 1 pinch salt
- ¼ cup mashed banana about 1 small banana
- 1 tablespoon agave or maple syrup more or less to taste
- ¼ cup diced strawberries
- ½ cup old fashioned oats
Optional Toppings
- Sliced strawberries sliced banana, sliced almonds
Instructions
Peanut Butter Honey Overnight Oats
- In a bowl (or mason jar) stir together all ingredients until well combined.
- Cover and store in fridge overnight.
- The next morning top with optional toppings and enjoy!
Blueberry Overnight Oats
- Place all ingredients (except oats) into blender and blend until smooth.
- Place mixture into a bowl, stir in oats.
- Cover and store in fridge overnight.
- The next morning top with optional toppings and enjoy!
Vegan Strawberry Overnight Oats
- In a bowl (or mason jar) stir together all ingredients until well combined.
- Cover and store in fridge overnight.
