Happy Monday! To kickstart the week, I wanted to bring you guys something that was both ultra decadent and dessert-like, but healthy enough for breakfast, because, I mean, we’re all on the same page that we want to start our week on a healthy note, but also. . . #Mondays.
Enter: White Chocolate Berry Cheesecake Oatmeal.

Typically, I’m pretty boring when it comes to my breakfasts. Iced coffee + some eggs (and hot sauce – duhhhhh) and I’m good to go.
Occasionally, however, I’ll be CRAVING something sweet.
Did I tell you when I was a kid, I’d sneak candy out of the candy drawer after I’d finish my breakfast?? Shhhh. Don’t tell my mom.
These days, when I’m craving something sweet in the AM, I bypass the candy and try to go for something healthy. Usually, I’ll go for one of my overnight oats recipes, but the other day I was needing something warm.
I flipped through Healthier Chocolate Treats and landed on Amy’s White Chocolate Berry Cheesecake Oatmeal and knew it would totally hit the spot.
And letmetellyou, it did NOT disappoint.
There are three things in particular I love most about this recipe:
#1: It’s crazy quick and easy to make.
#2: It tastes ahhhh-mazing.
#3: It ridiculously low in calories. We’re talkin’ 207 calories for a bowl of oatmeal that tastes like dessert. You can’t beat that!
Here’s what you’re gonna do:
In your favorite microwave safe bowl, stir together oats, milk, and some sugar-free, fat-free instant cheesecake pudding mix (OMG).
Microwave it until it becomes thick and delicious.
Stir in white chocolate chips (OMG x 2) and some chopped raspberries and dig in!
In just a few short minutes, you’ll have thick, creamy, tastes like dessert but is totally healthy: White Chocolate Berry Cheesecake Oatmeal.
To be honest, I had my doubts when I saw that there was only 7 grams (about 1 and 1/2 teaspoons) of the pudding mix, but omgsh it was absolutely perfect.
The pudding mix adds just the right of sweetness and cheesecake-y-ness to the oatmeal. That, plus the creamy white chocolate and tart raspberries?
Gimme!

White Chocolate Berry Cheesecake Oatmeal Recipe

Ingredients
- 1/3 cup old fashioned oats
- 2/3 cup nonfat milk
- 2 teaspoons sugar-free, fat-free instant cheesecake pudding mix
- 1/2 tbsp chopped white chocolate
- 1/4 cup fresh raspberries diced
Instructions
- Add the oats, milk, and pudding mix to a microwave-safe bowl, and stir until thoroughly combined. Microwave the bowl on HIGH for 2 minutes 15 seconds, stirring every 45 seconds, or until the oatmeal has thickened.
- Immediately add the white chocolate, stirring until it has melted. Stir in the raspberries. Let the oatmeal cool for 2 minutes before eating.
