This Chaffle Recipe is ultra crispy, yet fluffy and so flavorful! This keto breakfast is quick, easy, and can be made sweet or savory.
We don’t follow a keto or low carb diet, but sometimes you’re looking for different ways to serve your eggs. This chaffle recipe did not disappoint. These chaffles are crispy on the inside, fluffy in the middle, and are so incredibly flavorful! Want to kick it up a notch? Serve it with a drizzle of maple syrup and a few dashes of hot sauce — YUM!
What is a chaffle?
A chaffle is a flourless low carb “waffle” made with cheese and eggs instead of flour that is cooked in a waffle iron.
The base of a chaffle is just two ingredients: cheese and eggs, but it can be flavored with a variety of additional ingredients to make them sweet or savory.
Ingredients
This keto breakfast only requires 6 ingredients (that includes salt and pepper)!
- Cheese – the base of our chaffle that provides a crispy texture and cheesy flavor. Any flavor of cheese can be used, but be sure to shred the cheese yourself. Pre-shredded cheese contains an anti-caking agent that doesn’t allow the cheese to melt as well. The flavor is up to you, but a bold flavored cheese is preferred for maximum flavor — cheddar, pepper-jack, etc.
- Eggs – the binder that keeps the cheese together to hold it’s waffle shape! Eggs come in different sizes. This recipe calls for LARGE — check your carton!
- Parmesan – adds a nutty, slightly sharp flavor to the recipe. Unlike the other cheese, feel free to use a pre-grated variety.
- Seasonings: Garlic Powder, Salt, and Pepper – a simple homemade spice mix that adds tons of flavor.
How to make
Whisk, pour, cook, and devour! Easy AND delicious!
- Place shredded cheese, parmesan, eggs, garlic powder, salt, and pepper into a medium sized bowl, then whisk until well combined.
- Spray waffle maker with cooking spray, then cook according to manual.
- Serve as desired!
What cheese to use
Any block cheese that melts will work in this recipe: cheddar, pepper-jack, monterey-jack, gruyere, gouda, mozzarella, etc. Pre-shredded cheese isn’t recommend for chaffles; it contains anti-caking agents which prevents it from melting as well.
Bold flavored cheese like pepper-jack and cheddar are great for savory chaffles, but mozzarella is very mild and can be used to make sweet chaffles.
How to make chaffles crispy
If made as directed, your chaffles should come out crispy every time! Here are some tips for making extra crispy chaffles:
- Use a good waffle iron. A good waffle iron should be non-stick and get super hot. If the iron doesn’t get hot, the cheese won’t get hot enough to crisp up.
- Pre-heat the waffle iron. This will help cook the middle quickly while also achieving a crispy exterior.
- Don’t cut the cook time short. Let the chaffle get golden brown before removing it from the waffle maker. Golden brown color = crispy exterior.
- Keep warm/re-heat in the oven. While other chaffles are cooking, keep the cooked ones warm in the oven until ready to serve. If they’ve been chilled in the fridge, re-heat in the oven to re-crisp.
Are chaffles healthy?
It depends on what you consider healthy. If you’re following a low-carb, keto, high fat/high protein diet, then YES these chaffles are healthy!
One LARGE chaffle contains 530 calories, 40 grams of fat, 4 grams of carbs, 1 gram of sugar, and 38 grams of protein.
Variations
- Make sweet chaffles. Use mozzarella cheese, omit the parmesan, pepper, and garlic powder, then add 4 tablespoons cocoa powder and 2 tablespoons sweetener of choice. Serve with whipped cream, syrup, berries, chocolate sauce, etc.
- Use different cheeses. Try cheddar, pepper-jack, monterey-jack, gruyere, gouda, mozzarella, etc.
- Use different spices. Sprinkle in Italian seasoning or use taco seasoning for a Tex-Mex flair then top with greek yogurt and pico de gallo!
What to serve with chaffles
I love serving these chaffles as-is with hot sauce and maple syrup! Sometimes I’ll also garnish with crumbled feta and fresh herbs. Here are other ways to serve chaffles:
- Sausage Gravy – use the chaffles to replace traditional biscuits.
- Fried Chicken – serve chicken over the chaffles for a fun take on chicken and waffles!
- Other Sides – serve chaffles plain or with hot sauce and maple syrup alongside fruit salad, oven baked bacon, and breakfast potatoes!
How to store
Leftovers will last in an airtight container in the fridge for 3-4 days or in the freezer for 2 weeks.
To enjoy again, thaw, if frozen, then heat in the oven to re-crisp.
Can you freeze chaffles?
Yes. Place cooled chaffles onto a silicone mat lined baking sheet, then place in the freezer until frozen. Transfer frozen chaffles into an freezer safe baggie, then place back into the freezer for up to 2 weeks.
To enjoy again, thaw in the fridge then heat in the oven to re-crisp.
