It’s back to reality! While I really did enjoy havingĀ vacation time, and I really loved having Trevor home, AND I really loved how we pitched everything in our apartment that we haven’t touch in the past 6 months…I really love being back into a routine. Ā I missed cooking, photography, and writing. That’s a good sign, I suppose! So, to celebrate 2015 and being back in the swing of things, I just had to start out with a bang! Are you ready for this? You may want to sit down, but I’m guessing if you’re reading this, you already are, so that’s good. šĀ Put your hands together for….. Breakfast Egg rolls!! Yes. You read me right, breakfast egg rolls.
Like I said in my “yummy recipes of 2014” post, you guys really seemed to love my cheese wontons! That makes me so happy! It’s really the coolest feeling to have people coming to the site and actually making my food! I know that’s the whole point of having a food blog, but sometimes it doesn’t feel real, you know? So,Ā THANKĀ YOU for reading my blog and I truly hope you’re enjoying the recipes as much as I have!
Since the cheese wontons, all I’ve been thinking about is how to fry you up something else equally as delicious!
Next up….egg rolls, of course!
Traditional? That’s been done, and I’m no expert on Asian flair, although it should be a goal of mine to get better at it.
The next thing I thought was breakfast, because I haven’t posted many breakfast recipes! I have my breakfast pizza, and my breakfast burritos, but I need something else!Ā So with fried goodness, and breakfast, on the mind, I thought, why not make breakfast egg rolls?! I mean, who doesn’t love cheese scrambled eggs? Oh yea, and who doesn’t love fried egg rolls?
Start by cooking your sausage in a skillet over medium – medium high heat. Remove from heat, and set aside in a bowl when the sausage is fully cooked through and no pink remains. Break the sausage up with a spatula during the cooking process.
In the same skillet, melt 1 tablespoon butter and add in diced onion, red and green pepper. Cook until the peppers are softened to your liking, about 5 minutes. Season with salt and set aside.
Again, in the same skillet, melt another tablespoon of butter and add in whisked eggs. Cook until *almost* set.
The eggs will still be a little runny and shiny, but you’ll remove the pan from the heat, and they will continue to cook. Add in cooked sausage, veggies, cheese, and black beans. Mix together and season with more salt to your liking.
Now, lay an egg roll wrapper on your counter at an angle. It should look like a diamond. About 1/2 inch from the bottom corner, place 2 tablespoons of the egg mixture. Take theĀ bottom corner of the egg roll wrapper and lift it up and over the mixture.
Next, take the right corner and fold it to the center. Do the same with the left corner.
Now just roll until you only have a little triangle left at the top ofĀ the egg roll wrapper. Wet the seam with water, and continue rolling.
That wasn’t that hard, was it? š
Now, comes the frying part! Let me tell you IT IS NOT HARD! I promise. Fill the saucepan with about 1 inch of vegetable oilĀ and heat over medium heat. Ā Once the oil reaches 325 degrees F you can start cooking the egg rolls! I’d suggest cooking them one at a time. It should take less than 30 seconds. FlipĀ the egg roll over and move it around a little bit to ensure even cooking. When they’re done, they will be golden brown.
Once golden brown, remove from the oil and set onto a paper towel to drain.
Serve immediately with sour cream and salsa and enjoy!
Now I know you’re probably thinking, why would I EVER want to make egg rolls at 6 AM on a Monday morning? Well…you wouldn’t, Ā so make these the night before, maybe have a few for dinner ;), and store the rest in an airtight container in the fridge. The next morning(s) just heat up as many as you want in your toaster oven or oven! I placed them directly on the rack in my toaster oven at 400 degrees F for 10 minutes flipping them halfway through!

Breakfast Eggrolls
Equipment for this recipe
Ingredients
- 1 (8 oz) roll breakfast sausage
- Ā½ cup yellow onion diced
- Ā¼ cup red pepper diced
- Ā¼ cup green pepper diced
- salt and pepper to taste
- 1 tablespoon unsalted butter
- 6 large eggs beaten
- 1 cup mexican styled cheese shredded
- Ā¾ cup black beans drained and rinsed
- 12 eggroll wrappers
- vegetable oil for frying
Instructions
- Heat a large non-stick skillet over medium heat.
- Add in sausage, onion, and peppers.
- Cook, breaking up the meat as you go, until the sausage has cooked through and the peppers are softened to your liking. Season with salt and pepper, to taste.
- Remove from pan, drain any grease, and set aside.
- In the same skillet, melt butter, then stir in whisked eggs. Cook until *almost* set.
- Stir in sausage/veggie mixture, cheese, and black beans, then taste and re-season, if necessary. Set aside.
- Lay an egg roll wrapper on a clean work surface. About 1/2 inch from the bottom corner, place 2 tablespoons of the egg mixture.
- Take the bottom corner of the egg roll wrapper and lift it up and over the mixture.
- Take the right corner and fold it to the center. Do the same with the left corner.
- Wet the seam with water, and continue rolling.
- Roll until fully sealed.*
- Fill a large saucepan with 1 inch of vegetable oil and heat to 325 degrees F.
- Working with one egg roll at a time, cook in the hot oil for 30 seconds, or until golden brown, flipping halfway through.
- Remove from the oil and set onto a paper towel to drain.
- Serve immediately with sour cream and salsa and enjoy!
