Is it better to grill or bake pork chops?
It’s easier to dry out a pork chop on the grill, so we prefer to bake our pork chops. Grilling provides a slightly charred flavor and crispy exterior, but baking ensures incredibly juicy pork!
Ingredients
These pork chops require very few ingredients, but are absolutely packed with sweet, smoky, and slightly spicy bbq flavor!
- Brown Sugar – dark or light brown sugar may be used, but dark brown sugar will add a richer molasses flavor to the pork. The sweetness from the sugar provides a nice contrast to the spicy, smoky spice rub.
- Spices: Chili Powder, Paprika, Garlic Powder, Onion Powder, Salt, and Cayenne Pepper – our homemade spice rub which adds an incredibly smoky, slightly spicy flavor to the pork. This combination of seasonings compliments the BBQ sauce really well, but feel free to use your favorite store-bought BBQ spice rub, if desired. Serving this to kiddos? Omit the cayenne pepper or replace with ground black pepper to keep the pork more mild.
- Pork – look for 4 boneless pork chops that are about 1 inch thick. You can use pork that is thinner or thicker, but cook time will vary. Bone-in pork chops may also be used and only require a few extra minutes of cook time. Use a meat thermometer to ensure the chops reach an internal temperature of 145 degrees F.
- BBQ Sauce – we love Sweet Baby Ray’s classic BBQ sauce, but feel free to use your favorite store-bought or homemade variety! Don’t forget to save some extra for dipping.
How to make
Baking pork chops in the oven couldn’t be easier; simply rub, bake, rest, and serve!
- Stir together brown sugar, chili powder, paprika, garlic powder, onion powder, salt, and cayenne until combined.
- Place the pork chops onto a silicone mat lined baking sheet, then brush bbq sauce over each pork chop.
- Spoon the spice rub evenly over each pork chop, then rub the mixture into the pork until each of the pork chops is fully coated.
- Bake in preheated 400 degree F oven until the pork chops reach an internal temperature of 145 degrees F.
- Rest for 5-10 minutes, then slice, serve, and enjoy!

Depending on the thickness, boneless pork chops will cook in a preheated 400 degree F oven for 8-15 minutes.
Today’s recipe was tested using 1 inch thick pork chops and it took 15 minutes in my preheated oven. For best results, use a meat thermometer; the chops are cooked when the internal temperature is 145 degrees F.

How to store
Leftover pork will last in an airtight container in the fridge for 3-4 days or in the freezer for up to 3 months.
To reheat, thaw in the fridge, if frozen, then microwave or bake to warm.
