Ingredient notes
- Ground Chicken – pork, turkey, beef, Italian sausage or some combination of any or all of them work. 80/20 products (or similar) will give you juicy and tender meatballs without becoming overly greasy. Leaner is fine as well!
- Egg – you’ll need 1 large egg. Replace with 1/2 cup ricotta to keep egg- free.
- Panko Breadcrumbs – use gluten-free breadcrumbs to keep this gluten-free or check out my turkey meatballs.
- Cheese – I like using a romano, parmesan, and asiago cheese blend, but just one (such as only using parmesan) is great too.
- Garlic – use jarred pre-minced garlic or fresh.
- Olive Oil – if using a higher fat content (80/20 or fattier) feel free to omit.
- Spices: Garlic Powder, Onion Powder, Dried Basil, Italian Seasoning, Paprika, Salt, and Pepper – I like using this combination of spices, but play around and make your own spice blend, if preferred.
Can i make these on the stove?
Yes, to cook meatballs on the stove, add them to a pan of hot oil and sear on all sides until golden brown. Add your sauce, bring to a simmer, then cook until the centers reach 165 degrees F.
How to serve
- With pasta. Serve the meatballs over any pasta with your favorite spaghetti sauce.
- On bread. Toast a sub roll, spoon on meatballs and sauce, then broil with plenty of mozzarella!

- Sauce: marinara, alfredo, pesto, vodka sauce (coming soon!) etc.
- Bread: garlic bread, beer bread, rhodes rolls
- Salad: caesar salad, pear, blue cheese, candied pecan salad
How to store
Leftovers will last in an airtight container in the fridge for up to 4 days or in the freezer for up to 3 months.
To enjoy again, thaw, if frozen, then microwave, baked, or simmer with pasta sauce on the stove until warm.

Ingredients
- ½ cup panko breadcrumbs
- ½ cup grated romano, parmesan, and asiago cheese blend
- 2 tablespoons olive oil
- 1 large egg
- 1 tablespoon minced garlic
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried basil
- ½ teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 pound ground chicken
Instructions
- Preheat oven to 400 degrees F and line a rimmed baking sheet with a silicone mat.
- Place breadcrumbs, cheese, olive oil, egg, garlic, garlic powder, onion powder, dried basil, Italian seasoning, paprika, salt, and pepper into a large bowl, then mix until combined.
- Add in the ground chicken then, using your hands, mix again, until *just* combined.
- Use a large cookie scoop to scoop the mixture into 24 meatballs onto the prepared baking sheet.
- Bake in preheated oven for 15-20 minutes or until the outsides are golden brown and the centers are cooked through (165 degrees F).
- Serve as desired and enjoy!
