Baked Chicken Meatballs

Ingredients

  • ½ cup panko breadcrumbs
  • ½ cup grated romano, parmesan, and asiago cheese blend
  • 2 tablespoons olive oil
  • 1 large egg
  • 1 tablespoon minced garlic
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried basil
  • ½ teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pound ground chicken

Instructions

  • Preheat oven to 400 degrees F and line a rimmed baking sheet with a silicone mat.
  • Place breadcrumbs, cheese, olive oil, egg, garlic, garlic powder, onion powder, dried basil, Italian seasoning, paprika, salt, and pepper into a large bowl, then mix until combined.
  • Add in the ground chicken then, using your hands, mix again, until *just* combined.
  • Use a large cookie scoop to scoop the mixture into 24 meatballs onto the prepared baking sheet.
  • Bake in preheated oven for 15-20 minutes or until the outsides are golden brown and the centers are cooked through (165 degrees F).
