This Easy Gyros Recipe has juicy ground beef and pork gyro meat served in warm, fluffy pita and topped with creamy tzatziki, crisp lettuce, tomatoes, and red onion.

Ingredient notes

Gyro Meat
- Ground Meat: Pork and Beef – ground lamb may be used in place of the pork, but I find ground pork easier to find in a standard grocery store. Use 80/20 ground beef so it’s not too dry or too fatty.
- Onion – yellow onion or red onion are preferred for a sweeter flavor, but white onion may also be used. You’ll need 1/4-1/3 cup grated onion that’s been squeezed dry.
- Garlic – fresh or jarred garlic are both fine.
- Breadcrumbs – plain store-bought breadcrumbs work great. Use panko in a pinch, but the result may be crunchier. Seasoned breadcrumbs may also be used, but you may need to adjust the seasonings. Use a gluten-free variety, if necessary.
- Spices: Dried Oregano, Ground Cumin, Paprika, Dried Rosemary, Dried Thyme, Salt and Pepper – this is the combination of spices that I find the most flavorful and enjoyable, however, if there’s a spice you don’t enjoy, feel free to omit it. Be sure to use dried spices and herbs (not fresh) and don’t forget to check the expiration date; spices that are old lose their flavor.
Extras

- Pita – pita is obviously the most traditional thing to serve with gryo meat, but I absolutely LOVE the Specially Selected Garlic (or Plain) Naan from Aldi! Use the mini variety for smaller gyros.
- Tzatziki – homemade or store-bought is great!
- Feta – a block of feta is going to be creamier, richer, more flavorful and less dry than pre-crumbled feta, but use what you have on hand!
- Veggies: Tomatoes, Red Onion, and Romaine – optional, but highly recommended. They had a great fresh flavor and crispy crunch. Cucumber and olives would also be great. You could even make a greek salad (something like this chickpea chopped salad) to go on top instead!

- In a large bowl, mix together the grated and dried onion, garlic, breadcrumbs, and spices.

- Use your hands to stir in the pork and ground beef until *just* combined.

- Press into a loaf pan.

- Bake until cooked through.

- Cover and chill in the fridge overnight, then slice into thin strips.

- Crisp on the stove or in the oven, then serve as desired and enjoy!

Store leftover components separately. Leftover gryo meat will last in a sealed airtight container in the fridge for 3-4 days or in the freezer for 2-3 months.
To enjoy again, thaw, if frozen, then bake or pan-fry until heated through and crispy.

Ingredients
Gyro Meat
- 1 small yellow onion grated and squeezed dry (you should end up with 1/4-1/3 cup)
- ¼ cup breadcrumbs
- 1 tablespoon minced garlic
- 1 tablespoon dried oregano
- 2 teaspoons salt
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- ½ teaspoon ground black pepper
- 1 pound ground pork
- 1 pound ground beef I like 80/20
For Serving
- Pita or I like Specially Selected Garlic (or Plain) Naan from Aldi
- Tzatziki
- Sliced tomatoes
- Sliced cucumbers
- Sliced red onion
- Chopped romaine hearts
- Crumbled feta
Instructions
- Preheat oven to 325 degrees F and grease a 9x5 inch loaf pan with cooking spray. Set aside.
- In a large bowl, mix together grated onion, breadcrumbs, garlic, oregano, salt, cumin, paprika, rosemary, thyme, and pepper.
- Using your hands, mix in ground pork and ground beef until combined.
- Press the meat mixture into the prepared loaf pan and bake in preheated oven for 45-60 minutes, or until the internal temperature reaches 165 degrees F.
- Allow to rest at room temperature for 20 minutes.
- Cover the pan and refrigerate for a few hours or overnight (this helps maintain juiciness and makes it easier to slice).
- Remove the meat from the pan and slice into thin strips.
- Heat some of the meat drippings or a drizzle of oil in a pan over medium high heat.
- Once hot, lay the meat slices in an even layer and cook for 1-2 minutes on each side, until browned and crisp. (You could also lay the pieces in a single layer on a silicone mat lined baking sheet and broil for a few minutes in the oven.)
- Place hot meat into warm pitas, serve with desired toppings, and enjoy!
