Stay cool this summer, but satisfy your chocolate craving with these easy, yummy, oatmeal, peanut butter, chocolatey no-bake cookies! No oven necessary!
As much as I love my chocolate chip cookies… It’s too darn hot. 🎶 Because of this, I think it’s time for some no-bake cookies. Who’s with me?!
I grew up in the Midwest. Which means, during the summer, everybody has their air conditioning on. It’s hot. It’s humid. It’s uncomfortable. Like I mentioned Monday, we’re moving back to the midwest and arrive in Madison, Wisconsin today! Wish us luck back in the heat!
When Trevor and I moved to Seattle 3 years ago, we moved into our apartment complex and I was shocked to find out that they didn’t have AC! I guess it’s a normal thing for Seattle because most of the year the temperatures aren’t very extreme, but I, for one, am seriously missing our air conditioning. When the city gets to be 90 degrees, AC becomes a must.
The dilemma: I have to keep this food blog running, but I don’t want to cook over a hot stove for 30 minutes or turn on our oven.
The solution: No-bake cookies! Crockpot Thai Chicken Curry. Blueberry Peach Mojitos…etc.
We already did the curry and mojitos, so let’s talk cookies, shall we?
I remember the first time I had these no-bake cookies. My sister and I were over at our neighbors house hanging with our friends and their mom whipped up a batch of cookies. I had never seen cookies like this before, we usually did the classic chocolate chip cookie in our household…or one bowl brownies.
When I took my first bite of no-bake cookie, I went into some sort of food trance. I had never had such a thick, soft, chocolatey, peanut buttery, oatmeal cookie. There’s something just completely satisfying about these cookies. I’ll never forget my first no-bake cookie experience.
After that, I became completely obsessed. Begging my mom to make cookies “just like (our neighbor) Peg”.
I’ve made these no-bake cookies a hundred times, so don’t ask me why I haven’t shared these sooner…I blame the heat.
Which, oh yea, did I mention that our apartment is at least one thousand degrees inside? You can thank our lack of air conditioning for these cookies. I had a s-e-r-i-o-u-s chocolate cookie craving, but you better believe that oven was staying off.
These no-bake cookies take about 10 minutes from start – finish and only require a few minutes on the stove!
All you need to do is stir together granulated sugar, brown sugar, cocoa powder, butter, milk, and salt together in a medium sized saucepan. Bring this mixture to a boil, let it boil for a minute or two, and then stir in oatmeal, peanut butter, and vanilla.
Scoop these out onto some wax paper (you can see what it looks like in the video above), let them cool, so they can firm up, and you’ve got yourself the best no-bake cookies!

No-Bake Cookies

Ingredients
- 1 cup granulated sugar
- 1 cup brown sugar packed
- ¼ cup unsweetened cocoa powder
- ½ cup unsalted butter
- ½ cup milk
- ¼ teaspoon salt
- 3 cups quick cooking oats
- ½ cup peanut butter
- 2 teaspoons vanilla extract

Instructions
- Combine sugars, cocoa, butter, milk, and salt in a medium saucepan. Bring to a boil over high heat. Stir constantly.
- Once rapid bubbles have formed, start your timer and keep at a boil for 90 seconds - 2 minutes, stirring regularly.
- Remove from heat and add quick cooking oats, peanut butter, and vanilla.
- Mix well.
- Working quickly, use a cookie scoop to scoop cookies onto waxed paper.
- Let cool completely.
