I was thinking of ways I could combine some of my favorite things into recipes. One thing I love? Champagne. Another? Cheesecake! Boozy desserts are where it’s at. With those two things in mind, I created this delicious no-bake champagne cheesecake recipe. It’s so easy to make and SO delicious!
Ingredients
There are four layers to today’s dessert: a graham cracker crust, a white chocolate champagne cheesecake, a fresh strawberry layer, and a homemade fluffy champagne whipped cream.
Crust
- Graham Cracker Crumbs – make a crumbly, delicious base layer for this cheesecake.
- Unsalted Butter – binds the graham cracker crumbs together so it can hold its layer.
Two-ingredient crust has never tasted so good. Next up? The filling!
Filling
- White Chocolate – adds a creaminess and richness to the filling.
- Powdered Sugar – sweetens and thickens the filling.
- Cream Cheese – gives more texture and a bit of tang.
- Champagne – gives that apple-y, citrusy champagne flavor.
- Vanilla Extract – adds a vanilla bean flavor.
- Cool Whip – gives a fluffiness to the filling.
So thick and creamy, this filling is to die for!
Whipped Cream
- Powdered Sugar – thickens and sweetens the whipped topping.
- Heavy Cream – the base for the whipped cream. This should be very cold.
- Champagne – adds more of the champagne flavor to balance out the sweetness of the other ingredients.
- Vanilla Extract – adds flavor.
How to make no-bake champagne cheesecake
This champagne cheesecake is super easy to make and so yummy. And the best part is, it requires absolutely NO baking! Hallelujah!
- For the crust, mix graham cracker crumbs and butter in a large bowl. Set aside.
- Use a hand mixer to beat together all ingredients listed under “filling.” Place in a piping bag.
- Use a hand mixer to beat together all ingredients listed under “whipped cream.” Place in a piping bag.
- Alternate layers of crust, filling, sliced strawberries, and whipped cream in champagne flutes. Repeat. Top with strawberries and enjoy!

Variations
The fun thing about this no-bake champagne cheesecake recipe is that you can really customize it however you want!
- No champagne? Don’t like champagne? No problem! Try making a non-alcoholic, kid-friendly version by swapping out the champagne with either sparkling apple or sparkling grape juice.
- For different cheesecake flavor ideas, try replacing the filling from this recipe with the filling from another no-bake cheesecake recipe like my Lighter Lemon Walnut No Bake Cheesecakes Recipe or my funfetti cake batter dip.
- An alternative crust idea would be swapping out the graham cracker with another type of cookie, like chocolate chip cookies or even Oreos!

- Pressed for time? Ditch the homemade whipped cream and used the canned variety instead.

How to store your no-bake champagne cheesecake
These champagne cheesecakes are best served immediately or slightly chilled. Each component can be stored separately in airtight containers for up to 5 days. After assembly, they can be stored in the fridge for no more than 8 hours.

Equipment for this recipe
Ingredients
- 1-2 pints sliced strawberries
Crust
- 2 cups graham cracker crumbs
- ½ cup unsalted butter
Champagne Filling
- 1 (4 oz bar) white chocolate melted and cooled slightly
- ½ cup powdered sugar
- 1 (8 oz block) cream cheese softened
- ⅓ cup champagne
- 1 teaspoon vanilla extract
- 1 (8 oz tub) cool whip
Champagne Whipped Cream
- ¼ cup powdered sugar
- 1 cup heavy cream chilled
- ⅓ cup champagne chilled
- 1 teaspoon vanilla extract

Instructions
- Slice strawberries and set aside.
Crust
- Stir graham cracker crumbs and butter together in a large bowl and set aside.
Champagne Filling
- Use a hand-mixer to beat together melted white chocolate, powdered sugar, and cream cheese until well combined.
- Beat in champagne and vanilla extract.
- Fold in cool whip.
- Place into a piping bag and set aside in fridge until ready to use.
Champagne Whipped Cream
- Use hand mixer to beat powdered sugar, heavy cream, champagne, and vanilla together until stiff peaks form.
- Place into a piping bag and set aside in fridge until ready to use.
Assembly
- Place 8 champagne flutes in a line on your work surface.
- Place a small cookie scoop of graham cracker crumbs into the bottom of each flute
- Pipe on a layer of the filling.
- Add a layer of sliced strawberries.
- Pipe on a layer of whipped cream.
- Repeat.
- Garnish with strawberries and a fun straw, if desired.
- Serve immediately.
