4th of July is upon us and I’m always looking for fun ways to mix it up a little bit.
Every 4th of July party needs a potato dish, but this year, instead of doing the classic potato salad, how about giving this Easy, Cheesy Mashed Potato Chip Dip a try?!

Especially during the summer, because living in the Midwest, I seriously need to take advance of the next three months of gorgeous weather.

That being said, I feel like I entertain WAY more in the summer than I do any other season.
So, again, I am always, always, always looking for easy appetizer recipes and Mashed Potato Chip Dip just so happens to be my latest creation. 😉
First, you’re going to start by cooking up some bacon. All good recipes start with bacon, do they not?
Then, you’re going to cook some jalapeno pepper, green onions, and garlic IN the leftover bacon grease <– OMG.
Set the above aside. 👆
Next, you’re going to make some mashed potatoes. Today, we’re keeping these ULTRA easy and delish by using Idahoan Signature™ Russets Mashed Potatoes.
Boil water –> stir in potatoes –> watch them magically turn into mashed potatoes (their best tasting and highest-quality classic mashed potatoes yet!) –> stir in mayo, sour cream, bacon/jalapeno/green onion/garlic, ranch seasoning, and TWO kinds of cheese: cheddar and mozzarella.
Lastly, you’re going to place the potato mixture into an oven safe baking dish and top with MORE cheese and crushed potato chips.
Bake it up and serve with potato chips, crackers, and more!

Mashed Potato Chip Dip Recipe

Ingredients
Mashed Potato Chip Dip
- 3 slices bacon cooked and crumbled, reserve 1 tablespoon bacon grease
- ¼ cup diced jalapeno pepper remove seeds for a more mild flavor
- 2 Green onions diced
- 1 clove garlic minced or pressed
- 3 cups water
- ½ (9.74 oz) package Idahoan Signature™ Russets Mashed Potatoes (about 1 1/2 cups) prepared according to quick preparation listed on the back, I've also listed instructions below
- ¼ cup mayo
- ¼ cup Sour cream
- 1 (1 oz) packet dry ranch salad dressing
- ½ cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
Topping
- ½ cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 1 cup crushed potato chips
- Potato chips for serving
- crackers for serving

Instructions
- Preheat oven to 400 degrees F and place rung onto top rack.
- In an oven safe/stove safe cast iron skillet, heat 1 tablespoon bacon grease.
- Once hot, add in jalapeno, green onions, and garlic.
- Cook 60 seconds and set aside.
- In a large stockpot, boil water.
- Once boiling, remove from heat and stir in potatoes.
- Let stand one minute, then stir in bacon, jalapeno mixture, mayo, sour cream, ranch seasoning, cheddar, and mozzarella.
- Place potato mixture into the oven safe/stove safe cast iron skillet.
- Top with remaining cheddar, mozzarella, and crushed potato chips.
- Bake in preheated oven for 10 minutes.
- Serve with more potato chips and crackers!
