Who else is super pumped that soup season is here?! While I know it’s not cool weather everywhere quite yet, I, for one, could eat soup #allday #everyday, regardless of what’s happening outside.

Especially when recipes like this Slow-Cooker White Chicken Chili exist.

Loaded with tons of corn, chicken, cream cheese, and more, this chili is exactly what I want to cozy up to on a cool fall day.

Ready to hear the best part?

You literally throw all the ingredients into your crockpot, let it cook looooow and slooooooow, and dinner’s done.

You guys. Why do I not use my crockpot every day?!

bowl of white chicken chiliHonestly, while I do use my crockpot fairly often, I really do need to use it more. Even as a food blogger where the food runs aplenty, I LOVE when I can throw dinner together in just a few minutes at the beginning of my day, and have it ready by the time I’m done with work.

I’ve told you guys at least 1,000 times now that Trevor and I have been really busy with work, travel, etc. so quick crockpot dinners like this Slow-Cooker White Chicken Chili are a must.

The other day I had absolutely no motivation to figure out what to make for dinner and was about to cave and just order Indian food when I hopped over to tablespoon.com and found this article on 9 Dinners Absolutely Perfect for Fall. While all the recipes looked extremely cozy and delicious, I knew I needed to make the Slow-Cooker White Chicken Chili STAT.

If you haven’t been to tablespoon.com, you should totally check it out. I love it, because there are TONS of recipes ideas: everything from seasonal, fresh eating –> recipes with a twist –> global inspiration –> entertaining ideas –> food hacks, etc!

When you’re in the need of serious inspiration, tablespoon.com’s got you covered.

I highly suggest you start with their Slow-Cooker White Chicken Chili.

Here’s what you’re gonna do: throw all the ingredients into your crockpot – beans, chicken, spices, corn, broth, tomatoes, and green chiles – let it cook and at the end stir in cream cheese <– omg. <3

Then you’ll serve it up with all your fave chili toppings: tortilla chips, cilantro, jalapeno, sour cream, cheddar cheese. Any or all of them would be super delish on this chili.

I could eat soup every day as well! And I like the idea of adding chicken to it in order to make it much more filling – I need to try this recipe now that fall is finally upon us here in Denmark. Hope you have a lovely Sunday 🙂

This sounds absolutely wonderful! Can’t wait to try it! I wonder if it would be too spicy for the kiddos?

Thanks so much Janet! I actually didn’t think this was spicy at all, so I bet the kids would be just fine 🙂
