This roasted red pepper hummus is thick, creamy, so full of flavor, and a cinch to put together! It’s a great, vegan, healthy snack that everyone will enjoy!
I love snacking. Really I just love eating. If my whole life could revolve around food, I’d be the happiest lady in the world. Oh wait. My whole life does revolve around food. Yay! I am in the kitchen every day, either recipe testing or making and shooting a recipe for the blog. It’s really hard to have something delicious baking in the oven, or simmering away on the stove, and then have to wait to eat it until AFTER I photograph the recipe. So what do I do? I snack. I snack on things like this roasted red pepper hummus. Except, of course, I couldn’t snack on this while I was trying to shoot this recipe. 😉
The first time I had hummus was with Trevor when we first started dating and I was visiting him in LA. He wanted a snack and decided to whip up some hummus in his Vitamix. I immediately fell in love…with the hummus. Oh yea, with Trevor, too. 😉
I’m not sure how traditional his recipe is, but I’m not complaining. I love the taste of chickpeas and there’s a perfect amount of sesame seeds, oil, lemon juice, and of course, cumin. Since the first time he made it for me, I’ve loved it. Although I love his original version, I wanted to change it up a bit, so I added in roasted red peppers. It was delicious! It’s very subtle, but it really takes it over the top!
The other thing that takes this roasted red pepper hummus over the edge is the Vitamix
. Now, I know it’s expensive, but you should think of it as an investment! I’m not kidding when I say I use it multiple times a week. I’m also not kidding when I say I hate dishes and the Vitamix is a breeze to clean. The Vitamix is so powerful that it makes the hummus super, super, extra, extra creamy and because it’s so powerful you don’t need a ton of liquid, so you can have super, super, extra, extra thick roasted red pepper hummus, too! If you’re using a regular blender, you may want to take the skins off of the chickpeas, because it will make it smoother and creamier.
All you need to do is throw the ingredients into your blender, set it to the highest setting and let it whirl! Once the hummus is smooth, season with salt, to taste. I also love adding in cayenne pepper for an extra kick, but that’s up to you!
This tastes even better once it’s had a chance to chill in the fridge, so I’d definitely recommend making this a few hours before you actually need it.
I love serving this with a variety of vegetables, pita bread, tortilla chips, and crackers. This is also great in wraps and sandwiches, too!

Roasted Red Pepper Hummus
Equipment for this recipe
Ingredients
- 1 (15 oz) can chickpeas undrained
- 1 (15 oz) can chickpeas drained
- ¾ cup jarred roasted red peppers
- ¼ cup Sesame seeds
- 1 tablespoon olive oil
- ¼ cup lemon juice
- 1 clove garlic peeled
- 1 teaspoon cumin
- salt to taste
- cayenne pepper to taste
Instructions
- Throw the ingredients into the blender, except the salt and optional cayenne.
For the Vitamix
- Set the Vitamix to the "Frozen Desserts" setting and let it whirl! Once the cycle has finished, season with salt, to taste. I also love adding in cayenne pepper for an extra kick, but that's up to you!
For the blender
- Set your blender on it's highest setting and blend until smooth. If you don't have a very powerful blender, you may need to add more liquid. If you're concerned your blender isn't powerful enough, you may also want to peel the chickpeas before blending. Once smooth, season with salt and optional cayenne, to taste.
- This tastes even better once it's had a chance to chill in the fridge, so I'd definitely recommend making this a few hours before you actually need it.
