No-Bake Champagne Cheesecake

Layered with a delicious graham cracker crust, a sweet and creamy filling, and a light and fluffy whipped topping, these no-bake champagne cheesecakes are the perfect dessert for any party!

Ingredients

  • 1-2 pints sliced strawberries

Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter

Champagne Filling

  • 1 (4 oz bar) white chocolate melted and cooled slightly
  • 1/2 cup powdered sugar
  • 1 (8 oz block) cream cheese softened
  • 1/3 cup champagne
  • 1 teaspoon vanilla extract
  • 1 (8 oz tub) cool whip

Champagne Whipped Cream

  • 1/4 cup powdered sugar
  • 1 cup heavy cream chilled
  • 1/3 cup champagne chilled
  • 1 teaspoon vanilla extract

Instructions

  • Slice strawberries and set aside.

Crust

  • Stir graham cracker crumbs and butter together in a large bowl and set aside.

Champagne Filling

  • Use a hand-mixer to beat together melted white chocolate, powdered sugar, and cream cheese until well combined.
  • Beat in champagne and vanilla extract.
  • Fold in cool whip.
  • Place into a piping bag and set aside in fridge until ready to use.

Champagne Whipped Cream

  • Use hand mixer to beat powdered sugar, heavy cream, champagne, and vanilla together until stiff peaks form.
  • Place into a piping bag and set aside in fridge until ready to use.

Assembly

  • Place 8 champagne flutes in a line on your work surface.
  • Place a small cookie scoop of graham cracker crumbs into the bottom of each flute
  • Pipe on a layer of the filling.
  • Add a layer of sliced strawberries.
  • Pipe on a layer of whipped cream.
  • Repeat.
  • Garnish with strawberries and a fun straw, if desired.
  • Serve immediately.
