Ice cream cookie sandwiches are one of my FAVORITE desserts because the combination possibilities are ENDLESS! The combinations I used here are just some of my favorites but you can really follow these guidelines for any cookie and ice cream flavor combination!
Ingredients
There are four parts to today’s recipe: the cookie, the ice cream, the chocolate, and the toppings! Feel free to mix and match . . . have fun!
- Cookies – today I went with oreo thins, sugar cookies, chocolate chip cookies, and double chocolate brownie cookies! I personally used all store-bought, but feel free to try any of these homemade cookies: sugar cookies, chocolate chip cookies, and double chocolate cookies.
- Ice Cream – we used cookies ‘n cream, strawberry, chocolate chip cookie dough, and mint chocolate chip ice cream! Want homemade? Try my any of my easy no churn ice creams!
- Melted Chocolate – Use your favorite chocolate! Use white chocolate for an extra sweet, creamy topping. Try semisweet chocolate for that perfect sweet but not too sweet flavor. Kids will go crazy for milk chocolate or even use dark chocolate for an extra rich, sophisticated flavor.
- Toppings – The sky is the limit. Some of my favorites are sprinkles for a pop of color, crushed oreos for some crunch, Maldon sea salt for that classic sweet and salty flavor, crushed candy cane, mini chocolate chips, and crushed peanuts!
Feel free to use storebought OR homemade cookies and ice cream. If you’re pressed for time or looking for a quick and easy fun recipe to make with your kids, use store-bought ingredients! How to make easy ice cream sandwiches
Whether you’re using store-bought or homemade cookies and/or ice cream, this ice cream cookie sandwich recipe is incredibly quick and easy to make!
- Top fully baked and cooled cookies of your choice with a generous scoop of ice cream and then press the ice cream down slightly with a spatula.
- Sandwich your pick of slightly softened ice cream between two more cookies.
- Freeze then dip in optional chocolate and toppings. Refreeze and devour!
Because it’s so easy, this would be a perfect rainy day activity for kids! Let them each choose their favorite cookie, ice cream flavor, and toppings. Just make a few of each different kind of cookie and use small pints of ice cream, so you don’t have a ton leftover.
Best cookies for ice cream cookie sandwiches:
I highly recommend using store-bought break and bake cookie dough for the base of these ice cream sandwiches. Why? Because they’re already portioned out and the leftovers are easy to freeze which all means, less waste and you can make as many or as few as you’d like. You can literally make ONE ice cream sandwich if you want.
BUT, as I’ve said before, if you’re feeling ambitious, go ahead and make your favorite homemade cookies! Here are some of my favorite cookies for ice cream cookie sandwiches:

Best ice cream flavors for ice cream cookie sandwiches:
You really can’t go wrong when it comes to an ice cream flavor. Whatever flavor combination you come up with to pair with your cookie will be absolutely delicious. Keep it simple and use vanilla, go crazy and use something with chunks, keep it lighter by using frozen yogurt, or you could even try using your favorite sorbet! Here’s what I used today:
- Cookies N’ Cream – I paired this will Oreo thins, because what’s better than oreos on oreos?!
- Strawberry – I may be alone in this, but I just LOVE fresh strawberry ice cream.
- Chocolate Chip Cookie Dough – a classic. You just can’t go wrong with cookie dough!
- Mint Chocolate Chip – my absolute favorite. You either love mint or you think it tastes like toothpaste. 😉
Again, these are MY personal favorite flavors to use, but the choice is yours! Chocolate, vanilla, butter pecan… any combination will taste good. I mean, it’s cookies. And it’s ice cream. There’s no wrong answer!

For this recipe, I decided to make FOUR different types of ice cream sandwiches:
- Cookie Monster Ice Cream Sandwich – oreo thins and cookies ‘n cream ice cream dipped in melted chocolate.
- Chocolate Covered Strawberry Ice Cream Sandwich – sugar cookies and strawberry ice cream dipped in chocolate and sprinkles.
- Chipwich – the classic! Chocolate chip cookies and chocolate chip cookie dough ice cream sprinkled with Maldon sea salt.
- Mint Chocolate Ice Cream Sandwich – double chocolate cookies and mint chocolate chip ice cream drizzled in melted white chocolate.

Tips and tricks for making the best easy ice cream cookie sandwich recipe
- Try lots of flavors. Get smaller containers of ice cream and use store-bought break and bake cookie dough so that you can try a bunch of different flavor combinations.
- Play around with decorations and toppings. Make these easy ice cream cookie sandwiches extra fun by experimenting with different toppings on every flavor combo!
- Make the cookies ahead of time. The cookies need to cool completely so, if you’re making your own cookies, save yourself some time and make your cookies ahead of time.
- Let your ice cream soften. The ice cream should be firm, but scoopable. If it’s TOO soft, you’ll have a runny mess, but straight from the freezer is often too hard to scoop. Try letting your ice cream sit for just a little bit before making your ice cream sandwiches so the consistency is just right!
- Make room in your freezer. I froze my ice cream sandwiches on baking sheet lined with a silicone mat, so make sure you have room in your freezer for a sheet pan!
How to store your ice cream cookie sandwiches
These ice cream cookie sandwiches can be stored in an airtight container in the freezer for up to 3 months. If you’re going to stack the cookies, make sure you top each layer with parchment paper before adding another layer so they don’t get stuck together.
