These chocolate pistachio energy bites are naturally sweetened with dates & full of chocolate, coconut, & pistachios! A great, healthy, bite sized treat!
It’s Hump Day! Wednesday’s are always rough.
Monday and Tuesday are behind you *whew!*, but Thursday and Friday are still looming ahead and are in the way of your precious weekend! To help you get over the hump, today, I have chocolate pistachio energy bites! Get ready to be excited, because these take exactly ZERO energy to make.
These sweet – and healthy – treats will surely power you through the next couple of days and on to the weekend!
Soooo. I know I just posted about dark chocolate chunk quinoa granola bars and yes, they contained dates, coconut, and dark chocolate…just like today, but these chocolate pistachio energy bites are totally different! Promise 🙂
Trevor and I are both snackers.
Breakfast didn’t quite fill me up, but it’s not time for lunch, because I just ate like an hour ago. Snack time!
Repeat after lunch.
Repeat after dinner.
Although we both love snacking, I’m terrible at keeping ready to eat, convenient snacks around. I don’t like having store bought granola bars, because the kind we like are always so full of sugar and empty calories. Then there’s nuts, but eating too much of a good thing isn’t great for you either and they’re really addicting, so I can’t just stop at a handful! I also don’t keep much fresh fruit around, other than apples, because I always forget there’s fruit in the fridge, and by the time I find it, it’s green and fuzzy…it’s not supposed to be (unless it’s name is kiwi). Because I’m terrible at stocking up on snacks, Trevor and I end up snacking on bigger things like cheese quesadillas.
The problem? Our love of snacking, but no good snacks around.
The solution? These chocolate pistachio energy bites! Bet you didn’t see that coming 😉
These energy bites are amazing, because they take no time at all to come together and I’m guessing you have most of these ingredients on hand already! Plus, at this point, you all know I have a major sweet tooth, so you know I’m all over a quick and easy naturally sweetened snack to curb my cravings!
But why are you calling these energy bites, Jennifer?!
Long story short, the natural sugars in dates provide us with tons of energy! So….dates = energy. Then, I decided on pistachios, because they have fewer calories per serving than other nuts, and they’re a great source of fiber and protein, so they’ll keep you full longer. Also, my eyes are bigger than my brain, so I filled a ginormous plastic bag with pistachios at the grocery store, so I’m using them in every recipe possible. 🙂
Oh yea and these are bite sized. So dates (energy) + pistachios + bite sized = Chocolate Pistachio Energy Bites!
If you can soak dates in water and throw them into a food processor with pistachios, coconut, cocoa powder, salt, and vanilla, then you can make these chocolate pistachio energy bites. If you can’t…let’s talk…I’m looking at you, Mariah. 😉
These chocolate pistachio energy bites are chewy, naturally sweet, chocolatey, and delicious and can be dipped in cocoa powder or shredded coconut flakes…
Or even better? You can dip these in dark chocolate that’s been melted with a touch of coconut oil if you’re into that sorta thing…to clarify, I totally am and you should be, too.
I mean. Look. That chocolate.

Chocolate Pistachio Energy Bites
Equipment for this recipe
Ingredients
- ½ cup pistachios hulled
- ½ cup sweetened shredded coconut
- ¼ cup cocoa powder
- ¼ - ½ teaspoon salt
- 1 teaspoon vanilla extract
- 14 Medjool dates pitted
- dark chocolate mixed with a touch of coconut oil, for topping
- cocoa powder for topping
- shredded coconut for topping
Instructions
- Soak the dates in warm water for about 10 minutes. Drain.
- In your food processor, combine pistachios, shredded coconut, cocoa powder, and salt. Pulse until finely ground.
- Add in vanilla and the softened mejool dates and pulse until a ball forms.
- Roll into bite sized balls (mine were about 1/2 tablespoons) and dip immediately in to cocoa powder, shredded coconut, or my personal favorite dark chocolate that's been melted with a *hint* of coconut oil.
- Enjoy immediately! Store the leftovers in an airtight container in the fridge.
