Yes. It IS as good as it sounds. 😉 And bonus? It’s quick (helllllooooo 30 minute recipe), easy, and is perfect for this busy time of year aka BACK TO SCHOOL MADNESS.
While this recipe is absolutely perfect for a hearty breakfast, it’s also ah-mazing for a fun breakfast for dinner meal. Whatever time of day you choose to make this, I promise you, this recipe will be loved by the whole family.
I know. We’re all racing to get dinner on the table after school before evening extracurricular activities and homework begin . . . so let’s just jump right in, shall we?

- You don’t need more than that, because of the amazing flavor from the fresh pork!
- Cheddar cheese
- Sunny side up eggs (or eggs prepared your favorite way)
The great part about this recipe is that you really only need two pans to prepare it (one for the pork/potato mixture and one for the eggs), which is another awesome bonus during the busy school season!
You’ll start by cubing and sautéing the fresh pork in a little butter. Then, you’ll add in the potatoes o’brien and spices. Cover and cook, stirring occasionally, until the potatoes are tender. Stir in some cheese, top it with an egg, and dinner.is.served.

Cheesy Pork and Potato Breakfast Skillet
Equipment for this recipe
Ingredients
- 4 tablespoons unsalted butter divided
- 1 (23 oz) package Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet cubed into large bite sized pieces
- 1 (28 oz) bag potatoes o’brien (diced hash browns with peppers and onion), keep frozen
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt plus more to taste
- ½ teaspoon ground black pepper plus more to taste
- 1 (8 oz) block cheddar cheese shredded
- 8 large eggs cooked your favorite way and seasoned with salt and pepper (sunny side up is pictured)
Instructions
- Melt 1 tablespoon butter in a very large non-stick skillet over medium high heat.
- Add in fresh pork and let cook for 5 minutes, stirring every 1-2 minutes.
- Add in the remaining 3 tablespoons butter and stir to melt.
- Arrange pork in an even single layer. Add in frozen potatoes o’brien (you might need to break them up a bit if they’re clumped together) and arrange in an even layer.
- Sprinkle on garlic powder, onion powder, salt, and pepper.
- Cover and cook for about 15 minutes, stirring every 3-5 minutes to prevent burning but encourage browning, until the potatoes are tender and golden brown.
- Add in the cheese and stir until melted.
- Taste and re-season, if necessary.
- Serve with eggs, toast, fruit, etc.
