Because we have a food blog, we typically have a TON of food in our fridge.

That being said, if something is like really really really really REALLY good, sometimes, the recipe magically won’t make it over to our neighbors.
This Sausage and Potato Breakfast Hash Recipe was one of those times.

I’m sorry, guys, you’re just going to have to whip up a batch yourself. 😉
Luckily for us all, it’s ridiculously easy to make.
Today’s Sausage and Potato Breakfast Hash Recipe starts with, of course, Jones Dairy Farm No Sugar All Natural Pork Breakfast Sausage Roll. I LOVE using their sausage roll as a base for today’s recipe, because
- It’s DEEEEE-licious. It’s definitely the star of this hash.
- It’s certified gluten free with no preservatives or MSG! Plus, it’s only made with FOUR ingredients. No sugar, binders or fillers over here, thank-you-very-much.
You’ll start by sautéing the sausage in a pan (bonus if it’s cast iron and can be used ON the stove and IN in the oven) until it’s cooked through.
Then you’ll remove the sausage and set it aside while you start cooking some potatoes – I used sweet and tri-colored potatoes, because #purple-potatoes-are-cool – and asparagus, because #spring-has-sprung.
You’ll let that cook together for a bit then add in some onion.
Once the onion is cooked and the potatoes are tender, you’ll stir back in the Jones Dairy Farm All Natural Pork Breakfast Sausage Roll and some crumbled goat cheese.
Now, using the back of a spoon, you’ll create three little indents in the hash.
Crack an egg into each indent and bake until the eggs are set.
The result? It’s MIND BLOWING you guys.
I love love LOVE the combination of salty, hearty sausage, creamy, tangy goat cheese, ultra tender potatoes, and gooey eggs in this Sausage and Potato Breakfast Hash Recipe.
It’s simple. It’s hearty. It’s literally drool worthy.
