Cheesy Pork and Potato Breakfast Skillet

This Cheesy Pork and Potato Breakfast Skillet is GREAT for a quick and easy breakfast or dinner! Ready in 30 minutes or less, this skillet is quick, easy, and so delicious! Full of Applewood Smoked Bacon Marinated Fresh Pork, potatoes, veggies, cheese, and topped with eggs cooked your favorite way!

Ingredients

  • 4 tablespoons unsalted butter divided
  • 1 (23 oz) package Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet cubed into large bite sized pieces
  • 1 (28 oz) bag potatoes o’brien (diced hash browns with peppers and onion), keep frozen
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt plus more to taste
  • 1/2 teaspoon ground black pepper plus more to taste
  • 1 (8 oz) block cheddar cheese shredded
  • 8 large eggs cooked your favorite way and seasoned with salt and pepper (sunny side up is pictured)

Instructions

  • Melt 1 tablespoon butter in a very large non-stick skillet over medium high heat.

  • Add in fresh pork and let cook for 5 minutes, stirring every 1-2 minutes.
  • Add in the remaining 3 tablespoons butter and stir to melt.
  • Arrange pork in an even single layer. 
Add in frozen potatoes o’brien (you might need to break them up a bit if they’re clumped together) and arrange in an even layer.
  • Sprinkle on garlic powder, onion powder, salt, and pepper.
  • Cover and cook for about 15 minutes, stirring every 3-5 minutes to prevent burning but encourage browning, until the potatoes are tender and golden brown.
  • Add in the cheese and stir until melted.
  • Taste and re-season, if necessary.
  • Serve with eggs, toast, fruit, etc.

Notes

I also topped the skillet with crumbled feta, cilantro, and hot sauce!
