This almond butter granola recipe came to be, because I accidentally purchased and opened a jar of crunchy almond butter.
I mean.
Does anyone actually use crunchy almond or peanut butter?
I’m curious. Are you team crunchy or team creamy?
I’m team creamy all the way.
Anyway.
I couldn’t let a perfectly good jar of almond butter (even if it WAS crunchy) go to waste, so I thought it would be perfect for granola.
Boy oh boy was I right.
This recipe was actually a great excuse to get rid of random things I found half empty in my pantry:
- 1/2 cup sliced almonds
- Half a bag of chopped peanuts
- A few remnants of roasted peanuts
etc.
Lucky for all of us, it totally worked. 😉
Ingredients in almond butter granola:
- Crunchy almond butter – the all natural just nuts variety
- Coconut oil
- Salt
- Honey – or agave if vegan
- Pure maple syrup
- Salt
- Vanilla extract
- Almond extract
- Old fashioned oats – certified gluten free if necessary
- Sliced almonds
- Chopped pecans
- Dry roasted salted peanuts
- Dark chocolate chips
- Maldon sea salt, optional for topping
How do i make crunchy almond butter granola with clusters?
- Preheat oven to 300 degrees F and line a rimmed baking sheet with a silicone baking mat or parchment paper.
- Place almond butter, coconut oil, honey, maple syrup, and salt into a very large bowl.
- Microwave at 30 second intervals until smooth and melty.
- Stir in vanilla extract and almond extract.
- To the bowl, add in oats, almonds, pecans, and peanuts.
- Stir until fully incorporated.
- Spread the mixture evenly in a single layer onto the prepared baking sheet.
- Bake for 40 minutes in preheated oven, stirring halfway through.
- Remove the granola from the oven (DON’T STIR) and let cool for 20 minutes.
- Sprinkle with dark chocolate and Malden sea salt.
- Cool completely before storing in an airtight container.
How do you serve granola?
- With milk, like cereal.
- With fruit and yogurt to make a parfait.
- Turn them into vegan granola bars.
- Eat it plain.
- Eat it warmed in the microwave with an extra handful of chocolate chips, drizzle of peanut butter, and a scoop of ice cream. Ahem. Not like I’ve tried that or anything. 😉
This almond butter granola is perfectly almond butter-y and I LOVE all the amazing textures from the nuts and sticky honey/maple syrup.
