Almond Butter Granola

Ingredients

  • 3/4 cup crunchy almond butter
  • 1/4  cup coconut oil
  • 3 tablespoons honey or agave if vegan
  • 3 tablespoons maple syrup
  • 1/2  teaspoon salt
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon almond extract
  • cups old fashioned oats
  • 1/2  cup sliced almonds
  • 1/2  cup chopped pecans
  • 1/2  cup dry roasted salted peanuts
  • 1/2  cup dark chocolate chips or more to taste
  • Maldon sea salt for sprinkling

Instructions

  • Preheat oven to 300 degrees F and line a baking sheet with a silicone baking mat or parchment paper.
  • Place almond butter, coconut oil, honey, maple syrup, and salt into a VERY LARGE bowl.
  • Microwave at 30 second intervals until smooth and melty.
  • Stir in vanilla extract and almond extract.
  • To the bowl, add in oats, almonds, pecans, and peanuts.
  • Stir until fully incorporated.
  • Spread the mixture evenly in a single layer onto the prepared baking sheet.
  • Bake for 40 minutes in preheated oven, stirring halfway through.
  • Remove the granola from the oven (DON'T STIR) and let cool for 20 minutes.
  • Sprinkle with dark chocolate and Malden sea salt (DON'T STIR).
  • Cool completely before storing in an airtight container.
