This Spiked Tropical Cake Shake will immediately transport you to some place tropical! It’s so thick, creamy, and sweet. It takes like cake batter and is filled with cherries, pineapple, and of course, Malibu Rum!
This Tropical Spiked Cake Shake tastes like vacation. Why? Because it has Malibu in it, and I ALWAYS drink Malibu and Coke while on the beach, enjoying vacation. Ok fine. I drink Malibu and Coke at home, pretending like I’m on vacation or Fakation as we call it around our house. It’s easy when the weather is nice! 😉
Lucky for me, the weather has been G.O.R.G.E.O.U.S. in Seattle lately, with a few rainy days mixed in for good measure, of course.
Last week, Tuesday was one of those gloomy days, so I decided to get out some leftover pineapple upside down cake ice cream (no ice cream maker required, heeeyyyy!), and make a milkshake. If it was going to be gloomy outside, I could at least have it tropical inside.
What started as an innocent experiment, ended up being a very tasty adult treat!
At first, I was just going to blend some of that ice cream with some caramel sauce and call it a day, but then a lightbulb went off and I knew I needed to add some Malibu to my tropical concoction.
Before I go on, I have a teeny tiny confession to make: I’m obsessed with Malibu Rum.
It’s just so darn good and like I said, to me, it tastes like vacation.
I give full credit to my friend, Beth, who introduced me to the glorious wonders of the Malibu and Coke. When Trevor and I were still living in Iowa, we lived in this gorgeous loft…Tons of space, high ceilings, amazing natural light… it was perfect. Because we had so much room, and we both enjoy a cocktail every now and then ( 😉 ) Trevor and I wanted to create a huge at home bar.
We may have gotten a bit carried away, because every time we sat down to make a drink, we could never decide what to make. There were too many things to choose from!
Well, one night we had Beth over and she suggested that we have a Malibu and Coke. I’d never had one before, and it was definitely love at first sip. It’s coconutty perfection!
Ever since that night, it’s been my guilty pleasure and whenever Trevor and I go on vacation, we always pick up a bottle. 😉
I love Malibu so much that I couldn’t believe that I’ve never tried putting it in a milkshake before!
Malibu is my # 1 , but ice cream is definitely a very close # 2.
So I finally put two and two together and knew just what to do.
I put some ice cream in my Vitamix, added in a few shots of caramel, and a hefty pour of Malibu, and let it whirl!
In no time, I was sitting on my couch, looking at the best beaches in Mexico (we’re going to Cancun in December, any suggestions?!), while polishing off this tropical spiked cake shake.
This shake immediately transported me to all places tropical and is the perfect Summer treat! It’s so thick, creamy, and sweet. I love that this shake tastes like cake batter, and the flavor of pineapple, cherries, and coconut really come through! Oh. And I’m not complaining that caramel was involved both IN the shake and drizzled over the top.
This was such a fun twist with Malibu! Although I will always love my Malibu and Coke, this tropical spiked cake shake was definitely a special treat and I plan on enjoying a few too many this summer. 😉

Tropical Spiked Cake Shake
Equipment for this recipe
Ingredients
- 1 cup pineapple upside down cake ice cream
- 2 oz caramel ice cream topping + more for drizzling
- 1 ½ oz Malibu Rum
- maraschino cherry optional as a garnish
- whipped cream optional as a garnish
Instructions
- Place all the ingredients into a Vitamix or another powerful blender and blend until smooth!
- Serve immediately!
