We read through all the comments on our highly rated Christmas Crack recipe and made this recipe with THE alternative you’ve been asking for! This Graham Cracker Toffee is made with yep, you guessed it, graham crackers instead of the traditional saltines.

Ingredients
- Graham Crackers – I used a generic brand of honey graham crackers, but any graham cracker will do: cinnamon, chocolate, low-fat, etc. The Partake brand at Target makes a gluten-free, vegan graham cracker they may would as well, but I can’t vouch for the texture or flavor, because I haven’t personally tried them.
- Butter – unsalted butter was used in the original recipe, but salted butter may be used as well. A plant-based stick butter should also be fine if you’d like to make this recipe vegan.
- Brown Sugar – light or dark brown sugar work. Dark brown sugar will give a richer, stronger molasses flavor.
- Salt – not entirely necessary, but does balance out the sweetness from the graham crackers, toffee, and chocolate, so I’d highly recommend keeping it unless you absolutely can’t have the additional salt.
- Chocolate Chips – anything goes! I like semi-sweet, but dark chocolate or milk chocolate will also work. Some people have trouble with their chocolate chips melting, but I’ve used the cheapest, generic brand and have never had a problem, so make sure that your chips aren’t expired!
How to make
- Place crackers on a silicone mat lined baking sheet. Set aside.
- Boil butter, brown sugar, and salt a large saucepan for 3 minutes, pour over crackers, then bake at 375 degrees for 5 minutes.
- Sprinkle with chocolate chips, spread evenly over the crackers once melted, then sprinkle with desired toppings.
- Chill or freeze until hardened, then break into pieces and enjoy!
Variations
- Use another chocolate. Semi-sweet chocolate, dark chocolate, milk chocolate, or even white chocolate would be delicious.
- Make without chocolate. Simply omit the chocolate and serve with just the toffee (and toppings, if desired) or replace the chocolate with another baking chip such as peanut butter chips, butterscotch chips, etc.
- Sprinkle with other toppings. Use your favorite chopped candy (such as M&Ms or peanut butter cups), sprinkles, chopped nuts (such as almonds), crushed pretzels, or maldon sea salt.

How to store
Leftovers may be stored in an airtight container in the fridge for 1 week or in the freezer for 3 months.

Graham Cracker Toffee
Equipment for this recipe
Ingredients
- 28 squares honey graham crackers 28 squares = 14 full sheets
- 1 ½ cups unsalted butter 3 sticks
- 1 ½ cups light or dark brown sugar packed
- 1 teaspoon salt
- 1 (12 oz) bag chocolate chips semi-sweet, dark, milk chocolate
- Toppings of choice sprinkles, crushed pretzels, chopped M&Ms, etc. *
Instructions
- Preheat oven to 375 degrees F. Lightly grease a rimmed baking sheet with cooking spray, then line it with a silicone baking mat.
- Place crackers side by side onto prepared pan, doing your best to keep your crackers within the silicone baking mat. Set aside.
- Place butter, brown sugar, and salt into a large saucepan.
- Stirring regularly, bring the mixture to boil over medium/medium-high heat.
- Once boiling, boil for 3 minutes, stirring constantly.
- Pour slowly and evenly over crackers, trying your best to keep the toffee on the crackers, then bake in preheated oven for 5 minutes.
- Remove from oven, sprinkle chocolate chips on top, let stand for 5 minutes, then use the back of a spoon to spread melted chocolate chips evenly over the crackers.
- Top with desired toppings, cool completely in fridge (at least 2 hours) or in freezer (at least 1 hour), then break into pieces and enjoy!
- Graham cracker toffee may be enjoyed chilled or frozen.
