- Instant pot sweet potatoes
- Taco meat – beef, chicken, or turkey
- Veggies: onion, green peppers, red peppers

Ingredients in healthy taco stuffed sweet potatoes:
- 1 batch instant pot sweet potatoes
- 1 batch taco meat
- Oil
- Beef (or turkey or chicken)
- Homemade taco seasoning (you can also use a packet)
- Tomato sauce
- Lime juice
- Oil
- Yellow onion
- Green bell pepper
- Red bell pepper
- Salt and black pepper
- Black beans
How to make taco stuffed sweet potatoes:
- Make instant pot sweet potatoes.
- Make taco meat.
- Heat a large non stick pan over medium heat.
- Add in oil, onion, green pepper, red pepper, salt, and pepper.
- Cook until veggies are tender, about 5-10 minutes.
- Stir in black beans and cooked taco meat.
- Taste and re-season, if necessary.
- Cut sweet potatoes in half. Season with salt and pepper.
- Optional: place halved sweet potatoes onto a silicone mat lined baking sheet, top each half with shredded cheese, and bake at 350 degrees for 5-10 minutes or until cheese is melted.
- Place sweet potatoes in a bowl (easier to eat) and pile on the taco mixture!
- Pile on the toppings!
- Enjoy!

- 1 batch taco meat ground beef, ground turkey, or ground chicken
- 1 tablespoon olive oil
- 1 small yellow onion diced
- 1 large green bell pepper diced
- 1 large red bell pepper diced
- salt and pepper to taste
- 1 (15 oz) can black beans drained and rinsed
Optional toppings:
- Shredded Cheese
- Cilantro
- Green onion
- Lime juice
- Greek yogurt or sour cream
- Shredded lettuce
- Salsa or pico de gallo
