Ingredients
- Gnocchi – cook 1 (16 oz) package gnocchi in salted water according to package directions. If the gnocchi starts to float to the top of the water, it’s done! This usually takes about 2-4 minutes if using the shelf-stable variety. I like the brand DeLallo, but any brand you enjoy will be fine. Cauliflower gnocchi or sweet potato gnocchi will also work.
- Sausage – choose between sweet, mild, and hot Italian ground sausage. Chicken sausage, beef, or turkey may also be used, although you’d likely need to add additional seasoning such as Italian seasoning, dried basil, and/or dried oregano.
- Veggies: Onion, Carrot, Celery, and Garlic – add flavor and nutrients to the gnocchi, although, they may be omitted if you’re crunched for time. If you’re looking to up the nutrients even more, try throwing in some finely chopped spinach!
- Pasta Sauce – use 1 (24 oz) jar of your favorite store-bought pasta sauce. I used a basic marinara sauce, but a vodka sauce or cheesy pasta sauce might be delicious as well.
- Cheeses: Mozzarella and Parmesan – use 1 (8 oz) bag whole milk shredded mozzarella for the creamiest texture. Any finely grated parmesan is fine. Try throwing in a little provolone to replace some of the mozzarella or use a parmesan, asiago, romano cheese blend to mix it up a bit.

How to make
- Place sausage and veggies into a skillet and cook, breaking up the meat as you go, until the meat is no longer pink and the veggies are tender, stir in the pasta sauce, gnocchi, and half the mozzarella, then taste and re-season, if necessary.
- Pour into a 8×8 inch baking dish, top with remaining mozzarella and parmesan cheese, broil on the middle rack until the mozzarella has melted, then scoop, serve, and enjoy!

How to store
Leftovers will last in a sealed airtight container for 3-4 days in the fridge or for 1 month in the freezer.

Ingredients
- 1 (16 oz) package Italian sausage sweet, mild, or hot
- 1 small yellow onion finely diced
- 1 large carrot finely diced
- 1 rib celery finely diced
- 1 tablespoon minced garlic
- 1 (24 oz) jar marinara sauce
- 1 (16 oz) box gnocchi cooked according to box directions
- 1 (8 oz) bag shredded whole milk mozzarella cheese
- 2-4 tablespoons grated parmesan cheese
Instructions
- Place sausage, onion, carrot, celery, garlic, and a touch of salt into a sauté pan* and cook over medium heat, breaking up the meat as you go, until the sausage is no longer pink and the veggies are tender**.
- Drain excess grease, if necessary, stir in the marinara sauce, then gently fold in the cooked gnocchi and 1/2 the mozzarella cheese.
- Taste and season with salt***, if necessary, then pour into a greased 8x8 inch baking dish.
- Top with remaining mozzarella cheese, sprinkle with parmesan cheese, broil in the oven on the middle rack until the mozzarella cheese has melted, then serve and enjoy!
