- 1 (16 oz) package Italian sausage sweet, mild, or hot
- 1 small yellow onion finely diced
- 1 large carrot finely diced
- 1 rib celery finely diced
- 1 tablespoon minced garlic
- 1 (24 oz) jar marinara sauce
- 1 (16 oz) box gnocchi cooked according to box directions
- 1 (8 oz) bag shredded whole milk mozzarella cheese
- 2-4 tablespoons grated parmesan cheese
Place sausage, onion, carrot, celery, garlic, and a touch of salt into a sauté pan* and cook over medium heat, breaking up the meat as you go, until the sausage is no longer pink and the veggies are tender**.
Drain excess grease, if necessary, stir in the marinara sauce, then gently fold in the cooked gnocchi and 1/2 the mozzarella cheese.
Taste and season with salt***, if necessary, then pour into a greased 8x8 inch baking dish.
Top with remaining mozzarella cheese, sprinkle with parmesan cheese, broil in the oven on the middle rack until the mozzarella cheese has melted, then serve and enjoy!

*If you have an oven safe skillet, feel free to use that instead of a sauté pan and an 8x8 baking dish.
**If you’re using really lean sausage, you may need to add a splash of olive oil or a couple tablespoons of butter to cook the veggies.
***If you’re using a pretty bland flavored sausage, you may need to add additional seasonings such as Italian seasoning, dried basil, dried oregano, etc.
