It’s gettin’ festive up in here! I mean. How adorable are these chocolate cadbury egg cookies?! If these don’t scream all things spring and easter bunnies, then not I’m sure what will.
Can I let you in on a little secret? I had never had a Cadbury Mini Eggs until I made this recipe. Once March 1st hit, I saw them ALL over social media . . . people are legit obsessed with these mini eggs. For whatever reason, even being the candy lover I am, I never understood why.
Let’s just say, after I bought a bag two bags for this recipe . . . I understand the hype. This isn’t sponsored, but holy yum, they’re crispy, they’re creamy, and the chocolate is just so perfectly milk chocolate-y.
So. You can only imagine how amazing these chocolate cadbury egg cookies are!
Ingredients in chocolate cadbury egg cookies:
- Butter
- Brown sugar
- Egg yolk
- Maple syrup (makes these soooo chewy)
- Vanilla extract
- Flour
- Cocoa powder
- Baking soda
- Salt
- Cadbury Mini Eggs
- M&Ms – I used the Easter colored variety
How to make chocolate cadbury egg cookies:
- Preheat oven to 350 degrees F and line a rimmed baking sheet with a silicone baking mat or parchment paper.
- In a large bowl, beat together butter, brown sugar, and egg yolk until combined using a hand mixer.
- Beat in maple syrup until well combined.
- Add in flour, cocoa powder, baking soda, and salt. Beat together until fully combined.
- Beat in eggs and m&ms. Cover and chill dough for 30 minutes, if desired (they spread more if you don’t chill, but I always skip this step).
- Using a large cookie scoop, scoop 9 cookies onto the prepared baking sheet.
- Bake in preheated oven for 10-15 minutes (I did 12), or until cookies are cooked to your liking.
- Immediately, gently press extra M&Ms & Cadbury Eggs into the tops of each cookie. This is just to make them pretty.
- Let cool for a few minutes on the baking sheet, then remove, and finish cooling on wire rack.
- Repeat with remaining cookie dough.
- Enjoy!
These cookies are gooey, chewy, soft, a little crispy on the outside, loaded with melt-y chocolate and slightly crispy Cadbury Mini Eggs for texture, and just down right delicious!
