This Greek Tortellini Pasta Salad is my new favorite pasta salad. Well. This Mexican Pasta Salad is also my favorite, so I guess I have two favorite pasta salads: a spicy, rotini, Mexican flair pasta salad and a bright, cheese filled Mediterranean pasta salad.
Pasta. Salad. Heaven.
Pasta salad is honestly one of my favorite things about summer. I’ve said this before and I’ll say it again, forget the main dish and gimme all the sides. Especially if this greek tortellini pasta salad is there. It’s, hellllooooo, full of cheese filled pasta, salty feta – because there’s no such thing as too much cheese – fresh, crunchy veggies, and is tossed in an amazingly bright greek dressing.
Sounds complicated, right?
WRONG. While the flavors are really complex, the process… so easy. I think this may even win for “Easiest Recipe on SMTY”.

Boil some pasta, chop a few veggies, toss together a dressing, and sprinkle in some cheese and chickpeas.
BOOM! Done.
I ♡ easy recipes. Who doesn’t, really. I mean, I love easy recipes all the time, but I especially love them in the summer when our apartment is literally 90 degrees inside. Which, btw, I still have no idea why our apartment gets so unbearably hot. We’re on the first floor and we get zero sunlight. It’s a cave. But cool? Nope.
That’s why I decided to make this greek tortellini pasta salad. I had a real hankering for some cheesy pasta, but I wanted something cooling and fresh, too. The combination of cheese filled tortellini with fresh bell peppers, red onion, sun dried tomatoes, and a lemony, red wine vinegar-y dressing totally delivered.
The best part of this recipe, however, is that it can be served immediately at room temperature or later, served cold! I’ve tried it both ways and you really can’t go wrong!

Greek Tortellini Pasta Salad
Equipment for this recipe
Ingredients
Dressing
- 2 tablespoons oil from sun dried tomato jar
- 1 ½ tablespoons red wine vinegar
- 1 ½ tablespoons freshly squeezed lemon juice
- 1 clove garlic minced or pressed
- ¼ teaspoon dried oregano
- ¼ teaspoon dried basil
- ¼ teaspoon salt
Salad
- 1 (9 oz) package cheese tortellini
- 2 tablespoons finely minced sun dried tomatoes that have been packed in oil
- ¼ cup diced red onion
- ¼ cup diced red pepper
- ¼ cup diced green pepper
- ¼ cup crumbled feta
- ¼ cup chickpeas

Instructions
Dressing
- Combine all dressing ingredients into a mason jar, or similar container, and shake until combined.
- Set aside.
Pasta
- Cook pasta according to package instructions. Drain and set aside.
- Combine minced sun dried tomatoes, diced vegetables, feta, and chickpeas into a large bowl.
- Add in cooked tortellini.
- Coat with dressing and stir until combined.
- Serve immediately, warm, at room temperature, or chill, covered, in the fridge until cold.
