These three-ingredient Cake Mix Pumpkin Muffins only require a box of cake mix, a can of pumpkin, optional mix-ins, and about 5 minutes of prep!

Ingredient notes
- Pumpkin – you’ll need 1 (15 oz) can pure pumpkin puree. Make sure you’re not grabbing pumpkin pie filling, which contains additional spices and sugar.
- Cake Mix – you’ll need 1 (15.25 oz) box (which is typically Duncan Hines). You can use spice cake mix or yellow cake mix depending on how spiced you like your pumpkin muffins.
- Milk – use whatever you have on hand: whole, skim, almond, etc.
- Pumpkin Pie Spice – optional for additional flavor! I used 1 teaspoon with a box of spice mix for even more spiced flavor. If using yellow cake mix, add 1 tablespoon.
- Turbinado Sugar – optional for pretty looks and crunch!

How to make chocolate chip cake mix pumpkin muffins
- Into the batter, stir in 2/3 cups chocolate chips: white, semi-sweet, milk, dark, etc., pumpkin spice chips (these are by Nestle Toll House and found at Walmart), chopped roasted, salted pecans or a combination of all of the above!

How to make cake mix pumpkin muffins with crumb topping
- Mix together flour, sugar, cornstarch, cinnamon, and salt in a bowl, then use a fork to stir in melted butter to create the crumb topping. Place in the fridge until ready to use.
- Prepare muffin batter as directed, scoop into muffin tin, then gently press crumb topping on top.

How to make cake mix pumpkin muffins with glaze
- Whisk together melted butter, maple syrup, vanilla, salt, cinnamon, and powdered sugar until smooth. Add milk as needed to thin.
- Prepare and bake muffins according to directions. Cool slightly, then spoon glaze onto the muffins or dunk muffins into glaze.

- Preheat oven to 400 degrees F and grease a non-stick 12 slot muffin tin with cooking spray. Set aside.
- Place dry cake mix, pumpkin, and milk into a large bowl and stir together until combined.
- Spoon batter evenly into prepared muffin tin and bake in preheated oven for 15-20 minutes, or until an inserted toothpick comes out basically clean.
- Cool slightly, then remove from muffin tin and enjoy!
