This Tater Tot Breakfast Casserole is a crowd favorite! An easy brunch recipe that's brimming with gooey cheese, bacon, sausage, and eggs, and topped with crispy, yet fluffy tater tots.

Instructions
Preheat oven to 350 degrees F and grease a 9x13 inch baking pan with cooking spray. Set aside.
Heat a large non stick sauté pan over medium heat.
Once hot, add in bacon and cook until crispy.
Remove, crumble, and set aside.
To the hot pan, add in sausage, onion, bell peppers, garlic, 1/2 teaspoon salt and 1/2 teaspoon pepper.
Cook, breaking up the meat as you go, until the veggies are tender and the meat has cooked through.
Drain grease.
Stir in cooked and crumbled bacon, then pour mixture into prepared pan.
Sprinkle evenly with cheese.
Layer on tater tots. Set aside.
In a medium bowl, whisk together the eggs, half-and-half, garlic powder, and remaining 1/2 teaspoon salt and pepper.
Pour the egg mixture over the top of the tater tot mixture.
Bake until the eggs have set, about 60-75 minutes.
Cool slightly before serving and enjoying!
