Ingredients

  • 12 stand and stuff hard shell tacos
  • 1 pound Italian sausage
  • 1 green bell pepper diced
  • 1 yellow onion diced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • salt to taste
  • 1 cup canned refried beans
  • ¾ cup pizza sauce
  • ¼ cup taco sauce
  • 16 oz bag shredded colby jack cheese more or less to taste

Instructions

  • Bake taco shells according to package directions on a baking sheet. Set aside.
  • Heat a large non-stick pan over medium heat.
  • Once hot, add in sausage, pepper, onion, basil, oregano, and salt.
  • Cook, breaking up the sausage as you go, until sausage is cooked through and veggies are tender, about 10 minutes.
  • Stir in beans, pizza sauce, and taco sauce.
  • Simmer until most of the liquid has evaporated.
  • Taste and re-season, if necessary. Set aside, but keep warm.
  • Pre-heat the broiler and stand the tacos up on the baking sheet.
  • Sprinkle the bottoms of the inside of the shells with cheese (about 1 tablespoon each).
  • Fill shells with filling, then top with remaining cheese.
  • Broil until cheese has melted - this happens quickly, so keep an eye on them!
  • Serve with toppings and enjoy!

Notes

*Store the filling separately from the taco shells.
I love topping these with shredded lettuce, pico de gallo, sour cream, and other fun pizza toppings like pepperoni, olives, and mushrooms.
See post above for instructions on how to make these ahead and how to store
