Slow Cooker Spanish Shrimp and Quinoa

This Slow Cooker Spanish Shrimp and Quinoa Recipe is a flavorful and super healthy one pot wonder! Throw all the ingredients into your crockpot and let it cook! Ridiculously easy and full of quinoa, shrimp, spinach, tomatoes, and spices like smoked paprika, onion powder, and more!

Ingredients

  • 1 cup quinoa rinsed
  • 2 cups broth I used vegetable
  • 1 (14 oz) can fire roasted tomatoes drained
  • 1 tablespoon olive oil
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 tablespoon worcestershire sauce use gluten free if you’re gluten free
  • ½ teaspoon cayenne pepper
  • ½ teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried coriander
  • 1 cup frozen spinach
  • 1 (10 oz) package frozen shrimp peeled, de-veined, tail off
  • salt and pepper to taste
  • 1 cup green onion chopped
  • crumbled goat cheese
  • fresh herbs like parsley

Instructions

  • Grease crockpot with cooking spray.
  • Add in quinoa, broth, tomatoes, olive oil, honey, lime juice, worcestershire sauce, cayenne, paprika, onion powder, coriander, spinach, and shrimp.
  • Stir to combine.
  • Cover and cook on HIGH for 2 - 2 1/2 hours or on LOW 3 - 3 1/2 hours.
  • Taste and season with salt and pepper.
  • Serve with green onions, goat cheese, and herbs!
