Ingredients

  • 1 (16 oz) bag baby carrots
  • ¼ cup honey
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoons unsalted butter melted

Garnishes

  • Cilantro chopped
  • crumbled goat cheese

Instructions

  • Preheat oven to 350 degrees F and place baby carrots onto a rimmed 9x13 in baking sheet.
  • Whisk together honey, spices, and melted butter.
  • Drizzle honey mixture over carrots and toss to combine.
  • Bake in preheated oven for 20-35 minutes, or until carrots are cooked to your liking, stirring every 5-10 minutes to prevent burning.
  • Garnish with cilantro and goat cheese and serve immediately!
