Caprese Grilled Cheese Sandwich
If you're looking for a quick and easy, fresh, summer lunch, then look no further, because this Caprese Grilled Cheese Sandwich Recipe is perfect! Your favorite bread slathered in homemade (or store-bought) pesto and topped with gooey mozzarella cheese, and fresh juicy tomatoes!

Ingredients
- 4 slices roma tomato I needed less than 1 roma tomato
- ½ tablespoon extra virgin olive oil
- ½ tablespoon balsamic vinegar
- 1 clove garlic minced or pressed
- salt to taste
- 2 slices bread
- 2 tablespoons basil pesto
- 2 slices mozzarella cheese I sliced a fresh mozzarella ball
- 2 tablespoons unsalted butter
Instructions
- In a small bowl, gently stir together tomatoes, oil, vinegar, garlic, and salt, to taste. Set aside.
- Spread pesto on one side of each piece of bread.
- Top one side with mozzarella and tomatoes.
- Top with remaining piece of bread. Set aside.
- Melt butter in a non-stick saute pan over medium heat.
- Place sandwich in pan and cook until golden brown.
- Flip and continue cooking until the other side is golden brown and the cheese is fully melted.*
- Slice and serve!

Notes
*If your bread gets golden before the inside is warm and melty, you can finish heating sandwich on an unlined baking sheet in the oven at 375 degree F for 5-10 minutes.
