Crockpot Chicken and Broccoli

Crockpot Chicken and Broccoli
- 1 cup chicken broth
- 1/2 cup soy sauce or gluten free alternative
- 1 tablespoon hoisin sauce
- 1/4 cup dark brown sugar packed
- 1 tablespoon sesame seed oil
- 4 cloves garlic minced or pressed
- 1 1/2 pounds raw boneless, skinless chicken breasts
- 2 tablespoons cornstarch
- 1/4 cup water
- 1 head broccoli cut into florets
Rice
- 1 cup long grain rice
- 2 cups water
- 1 teaspoon salt
- 1 tablespoon unsalted butter
Crockpot Chicken and Broccoli
Whisk together chicken broth, soy sauce, hoisin sauce, brown sugar, sesame seed oil, and garlic cloves.
Pour half of the sauce into a greased crockpot. Place chicken breasts in and then pour the remaining sauce over the chicken.
Cook on low for 4 hours, covered.
Mix together cornstarch and water and stir it into the crockpot.
Stir in broccoli florets.
Cook on high for 1 hour, covered.
Remove the chicken, cut into large chunks, and place back in the crockpot.
Serve immediately over rice!
Rice
Place rice, water, salt, and butter in a medium sized sauce pan.
Bring to a boil.
Cover, lower heat to low, and simmer for 15 minutes. Fluff with a fork.
