Crockpot Chicken and Broccoli

  • 1 cup chicken broth
  • 1/2 cup soy sauce or gluten free alternative
  • 1 tablespoon hoisin sauce
  • 1/4 cup dark brown sugar packed
  • 1 tablespoon sesame seed oil
  • 4 cloves garlic minced or pressed
  • 1 1/2 pounds raw boneless, skinless chicken breasts
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 1 head broccoli cut into florets

Rice

  • 1 cup long grain rice
  • 2 cups water
  • 1 teaspoon salt
  • 1 tablespoon unsalted butter

Instructions

Crockpot Chicken and Broccoli

  • Whisk together chicken broth, soy sauce, hoisin sauce, brown sugar, sesame seed oil, and garlic cloves.
  • Pour half of the sauce into a greased crockpot. Place chicken breasts in and then pour the remaining sauce over the chicken.
  • Cook on low for 4 hours, covered.
  • Mix together cornstarch and water and stir it into the crockpot.
  • Stir in broccoli florets.
  • Cook on high for 1 hour, covered.
  • Remove the chicken, cut into large chunks, and place back in the crockpot.
  • Serve immediately over rice!

Rice

  • Place rice, water, salt, and butter in a medium sized sauce pan.
  • Bring to a boil.
  • Cover, lower heat to low, and simmer for 15 minutes. Fluff with a fork.
