Mediterranean Farro Salad Recipe

- 1 cup Bob’s Red Mill Organic Farro cooked in vegetable broth according to package directions
- 1/4 cup diced red onion
- 1/2 cup diced red pepper
- 1/2 cup diced green pepper
- 1/2 cup diced cucumber
- 1/4 cup kalamata olives chopped
- 2 cloves garlic minced or pressed
- 1/4 cup crumbled feta optional, omit if vegan or dairy free
- 1/2 cup chickpeas drained
- 1/4 cup red wine vinegar
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried dill
- 1/2 teaspoon salt more or less to taste
Place all ingredients in a large bowl.
Stir to combine.
Cover and chill in fridge until ready to serve!
Taste and re-season, if necessary, before serving!
