Instructions
Combine salt and onion in large mason jar or mixing bowl.
Let sit for 15 minutes
Pour in vinegar, lime juice, oil, sugar, peppercorns, oregano, cumin, bay leaves, and garlic.
Shake or stir to combine.
Cover and chill in fridge for at least 4 hours.
Serve and enjoy!
