Ingredients
Cajun Seasoning
1teaspoonsalt
2teaspoonsgarlic powder
2 ½teaspoonsPaprika
¼teaspoonground black pepper
1teaspoononion powder
1teaspooncayenne pepper
1teaspoondried oregano
1teaspoondried thyme
½teaspoonred pepper flakes
Cajun Shrimp and Chorizo Pasta
½poundchorizo
¼cupunsalted butter+ splash of olive oil to keep it from burning
2green bell pepperdiced
1red bell pepperdiced
1(8 oz) packagewhite mushroomssliced, about 2 cups
½yellow oniondiced
4clovesgarlicminced or press
2tablespoonscajun seasoningdivided
10ozlarge shrimppeeled and deveined with tails taken off
In a large skillet, cook chorizo over medium high heat, breaking it up as it cooks. Remove from the skillet once cooked through, this should only take a couple of minutes.
Lower the heat to medium and melt butter together with the olive oil.
Stir in peppers, mushrooms, onion, and 1 tablespoon cajun seasoning.
Cook until soft, about 5 minutes.
Stir in garlic and cook for 30 seconds.
Stir in shrimp and cook until firm and pink, about 3 - 5 minutes.
Add in half-and-half, parmesan cheese, and chorizo.
Bring to a simmer, to thicken. Simmer for about 10 minutes.
Season with another 1 tablespoon cajun seasoning and salt, to taste.
Toss with pasta (cooked according to directions on package).
