Ambrosia

Ambrosia is the perfect 10-minute side dish. It's light and fresh, sweet and creamy, and absolutely packed with sweet fruit, fluffy marshmallows, crunchy pistachios, and chewy coconut.

Ingredients

  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 1 (3.4 oz) package pistachio pudding mix
  • 1 (8 oz) container cool whip thawed in the fridge according to package directions
  • 2 cups miniature marshmallows feel free to add more if desired
  • 1 cup shredded sweetened coconut
  • ½ cup roughly chopped shelled roasted salted pistachios feel free to add more if desired
  • 1 (15 oz) can fruit cocktail drained
  • 1 (11 oz) can mandarin oranges drained
  • 1 (8 oz) can pineapple chunks drained

Instructions

  • In a large bowl, whisk together sour cream, vanilla, and dry pudding mix until well combined.
  • Gently fold in the cool whip until evenly incorporated.
  • Add in marshmallows, coconut, pistachios, fruit cocktail, oranges, and pineapple.
  • Stir to combine.
  • Cover and chill in the fridge for an hour, then serve and enjoy!
