Scotcheroos

These scotcheroos are a classic no bake peanut butter chocolate dessert bar! A WHOLE box of rice krispies is mixed with corn syrup, brown sugar, peanut butter, vanilla, and salt, then smothered with a creamy chocolate and butterscotch topping.

Ingredients

  • 12 oz box Rice Krispies cereal
  • 2 cups corn syrup
  • 2 cups brown sugar packed
  • 2 cups peanut butter
  • 1 tablespoon vanilla
  • 1/2 teaspoon salt
  • 12 oz package chocolate chips
  • 12 oz package butterscotch chips

Instructions

  • Grease a 9x13 inch pan with cooking spray and line with a parchment sling. Set aside.
  • Place rice krispies into a VERY large bowl. Set aside.
  • Place corn syrup and brown sugar in a medium saucepan.
  • Bring to a boil over medium heat, stirring frequently.
  • Once boiling, turn off the heat, then stir in peanut butter, vanilla, and salt.
  • Pour over cereal and mix to combine.
  • Pour into prepared pan. Grease hands with cooking spray and gently press down. Set aside.
  • Place chocolate chips and butterscotch chips into a medium sized microwave safe bowl. Melt until smooth.
  • Spread over bars.
  • Cool completely before slicing and serving.
