Ingredients

  • 1 1/2 cups pineapple juice divided
  • 1/4 cup lime juice
  • 1/4 cup soy sauce use a gluten free variety if necessary
  • 1/2 cup honey
  • 1-4 tablespoons sriracha *
  • 1-4 tablespoons brown sugar optional to balance out the spice*
  • 4 cloves garlic minced or pressed
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 2 pounds boneless skinless chicken breasts
  • 2 cups fresh pineapple cut into 1 inch chunks
  • 1/4 cup cornstarch
  • Cooked rice for serving
  • Sliced green onions for garnish, if desired
  • Sesame seeds for garnish, if desired
  • Red pepper flakes for garnish, if desired

Instructions

  • Grease a 6 quart crockpot with cooking spray, then whisk in 1 1/4 cups pineapple juice, lime juice, soy sauce, honey, sriracha, optional brown sugar, garlic, ginger, and black pepper.
  • Stir in chicken breasts and pineapple.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  • Remove chicken and set aside.
  • In a small bowl, whisk together the remaining 1/4 cup pineapple juice and cornstarch until well combined, then slowly whisk into the crockpot.
  • Cube chicken and stir back into the crockpot.
  • Cover and cook on HIGH for 30 minutes.
  • Taste and re-season, if necessary, then serve and enjoy!

Notes

*Start with 1 tablespoon sriracha, then taste and add more as desired. If it’s too spicy, stir in brown sugar. Again, starting with 1 tablespoon and adding more as needed.
