Ambrosia is the perfect 10-minute side dish. It's light and fresh, sweet and creamy, and absolutely packed with sweet fruit, fluffy marshmallows, crunchy pistachios, and chewy coconut.

- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1 (3.4 oz) package pistachio pudding mix
- 1 (8 oz) container cool whip thawed in the fridge according to package directions
- 2 cups miniature marshmallows feel free to add more if desired
- 1 cup shredded sweetened coconut
- 1/2 cup roughly chopped shelled roasted salted pistachios feel free to add more if desired
- 1 (15 oz) can fruit cocktail drained
- 1 (11 oz) can mandarin oranges drained
- 1 (8 oz) can pineapple chunks drained
In a large bowl, whisk together sour cream, vanilla, and dry pudding mix until well combined.
Gently fold in the cool whip until evenly incorporated.
Add in marshmallows, coconut, pistachios, fruit cocktail, oranges, and pineapple.
Stir to combine.
Cover and chill in the fridge for an hour, then serve and enjoy!
