This Chicken Salad Recipe is ridiculously easy to throw together and my version of a classic! Light, creamy, and so yummy, you're going to want to give this recipe a try!

  • 1 cup olive oil mayo
  • 2 tablespoons relish
  • 2 tablespoons dijon mustard
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 1 pound rotisserie chicken cubed (about 1 small rotisserie chicken-skin removed)
  • 1 celery stalk diced
  • 2 tablespoons red onion finely diced
  • 1-2 (1 oz box) raisins I like 2
  • 1/2 cup pecans roughly chopped


  • In a large bowl, whisk together mayo, relish, mustard, garlic powder, salt, and pepper.
  • Stir in chicken, celery, red onion, raisins, and pecans.
  • Taste and re-season if necessary.
  • Serve or cover and chill in the fridge until ready to serve.
