Instructions
Preheat oven to 350 degrees F and line a rimmed baking sheet with a silicone mat.
In a large bowl, mix together flaxseed meal and water. Let sit for 10 minutes.
Stir in the coconut oil, brown sugar, and vanilla.
Stir in the ground oats, old fashioned oats, coconut, baking soda, cinnamon, and salt.
Fold in the chocolate chips.
Bake cookies for 10-12 minutes or until cookies are cooked to your liking.
Sprinkle with sea salt.
Cool on baking sheet for 10 minutes, then transfer to a wire rack to finish cooling.
