Preheat oven to 250 degrees F and line a rimmed baking sheet with a silicone mat.
Mix sugar and salt in a gallon sized ziplock baggie.
Use a hand mixer to whisk egg white and water together in a separate bowl until VERY frothy.*
Toss pecans in the egg white mixture.
Pour nuts into bag, seal, and shake to combine.
Spread coated pecans into an even layer onto prepared baking sheet. Bake for one hour in the preheated oven, stirring every 15-30 minutes, until pecans are evenly browned.
Remove from oven and let cool completely before breaking them up and storing them in a sealed container.

*Really whip the egg whites until VERY frothy, they should quadruple (if not more) in size. This helps coat the pecans better and makes them crunchier.
