Ingredients

  • (12 oz) package fully cooked sun dried tomato chicken sausage cut into 1/2 inch rounds (could use another flavor of choice)
  • yellow onion sliced
  • red bell pepper  sliced
  • green bell pepper  sliced
  • yellow bell pepper sliced
  • tablespoon  olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • teaspoon  smoked paprika
  • teaspoon  salt plus more to taste
  • 1/2  teaspoon  pepper

Instructions

  • Preheat oven to 400 degrees F and line a rimmed baking sheet with a silicone baking mat or parchment paper.
  • Place chicken sausage, onion, and peppers onto prepared baking sheet.
  • Drizzle with olive oil and sprinkle with spices.
  • Toss to fully coat the chicken and veggies.
  • Make sure the chicken and veggies are evenly spread in a single layer.
  • Bake in preheated oven for 20 minutes, or until veggies are tender and cooked to your liking, stirring halfway through.
