Healthy Taco Stuffed Sweet Potatoes
Healthy Taco Stuffed Sweet Potatoes. Tender sweet potatoes topped with homemade taco meat, peppers, onions, black beans, and optional toppings: cheese, cilantro, sour cream, greek yogurt, tortilla chips, pico de gallo, salsa, etc!
Servings: 8 - 12 sweet potato halves
- 1 batch instant pot sweet potatoes
- 1 batch taco meat ground beef, ground turkey, or ground chicken
- 1 tablespoon olive oil
- 1 small yellow onion diced
- 1 large green bell pepper diced
- 1 large red bell pepper diced
- salt and pepper to taste
- 1 (15 oz) can black beans drained and rinsed
- Shredded Cheese
- Green onion
- Lime juice
- Greek yogurt or sour cream
- Shredded lettuce
- Salsa or pico de gallo
- Crushed tortilla chips
Make instant pot sweet potatoes.
Make taco meat.
Heat a large non stick pan over medium heat.
Add in oil, onion, green pepper, red pepper, salt, and pepper.
Cook until veggies are tender, about 5-10 minutes.
Stir in black beans and cooked taco meat.
Taste and re-season, if necessary.
Cut sweet potatoes in half. Season with salt and pepper.
Optional: place halved sweet potatoes onto a silicone mat lined baking sheet, top each half with shredded cheese, and bake at 350 degrees for 5-10 minutes or until cheese is melted.
Place sweet potatoes in a bowl (easier to eat) and pile on the taco mixture!
