  • 1 batch instant pot sweet potatoes
  • 1 batch taco meat ground beef, ground turkey, or ground chicken
  • 1 tablespoon olive oil
  • small yellow onion diced
  • large  green bell pepper diced
  • large red bell pepper diced
  • salt and pepper to taste
  • 1 (15 oz) can black beans drained and rinsed

Optional toppings:

  • Shredded Cheese
  • Cilantro
  • Green onion
  • Lime juice
  • Greek yogurt or sour cream
  • Shredded lettuce
  • Salsa or pico de gallo
  • Guacamole
  • Crushed tortilla chips


  • Make instant pot sweet potatoes.
  • Make taco meat.
  • Heat a large non stick pan over medium heat.
  • Add in oil, onion, green pepper, red pepper, salt, and pepper.
  • Cook until veggies are tender, about 5-10 minutes.
  • Stir in black beans and cooked taco meat.
  • Taste and re-season, if necessary.
  • Cut sweet potatoes in half. Season with salt and pepper.
  • Optional: place halved sweet potatoes onto a silicone mat lined baking sheet, top each half with shredded cheese, and bake at 350 degrees for 5-10 minutes or until cheese is melted.
  • Place sweet potatoes in a bowl (easier to eat) and pile on the taco mixture!
  • Pile on the toppings!
