Equipment

Ingredients

  • 1 batch crockpot salsa chicken you should have 24 tablespoons
  • 12 tablespoons shredded cheese I used a pre-shredded Mexican blend
  • 12 small corn or flour tortillas should be 5.5 - 6 inches in diameter
  • Salsa, pico de gallo, guacamole, greek yogurt optional for serving

Instructions

  • Working with one tortilla at a time, place two tablespoons of shredded chicken on one end of the tortilla.
  • Place one tablespoon shredded cheese on top of the chicken.
  • Roll to form the taquito, starting at the filled side.
  • Use two toothpicks to secure the taquito along the seam.
  • Repeat with remaining taquitos.
  • Hit “ON” on the air fryer.

  • Then hit “PRE-HEAT”.
  • Set the temperature to 400 degrees F and set the timer to 6 minutes.
  • Hit “START”.
The air fryer will beep at you when it’s finished preheating.

  • Open up the air fryer and spray the basket with cooking spray.
Place 4 taquitos (tooth picks will be facing up) into the basket, making sure they’re not touching, and spray the tops with more cooking spray.
  • Air fry for 5-6 minutes*, or until the tortillas are brown and crispy to your liking.
  • Repeat with remaining taquitos.
  • Remove toothpicks before serving.
  • Serve with salsa, pico de gallo, guacamole, or greek yogurt, if desired!
  • Take 5 seconds to rate this recipe below. We greatly appreciate it!

Notes

*I like removing the toothpicks then flipping the taquitos halfway through for the most even browning.
**See post above for oven baked and deep frying suggestions.
*** Nutritional information is a VERY rough guesstimate based on the cheese/tortilla brand I used. They'll be more or less based on what cheese/tortilla you use.
**** Use really fresh corn tortillas to avoid tearing. You can microwave them with a wet paper towel if they're too dry before rolling.
